The first sip opens with a fruity aroma and is sweet and sour and very juicy in the beginning! The full-bodied sweet flavor gradually gives way to a complex, tangy bitterness. The freshness of the sake makes it clear and well-balanced. And with a moderate alkalinity of 15 degrees, it gently soaks through. ☺️ It was a stable taste that did not betray our expectations 😆.

We will have our first Gagakuyo. It has a refreshing sourness of grapefruit with a moderate sweetness. The soft umami and bitterness disappear beautifully. The low alcohol content of 12.5 degrees makes it light and easy to drink. It is easy to drink it in large gulps, but when the temperature begins to rise, the flavor expands and it is just ready to drink.

Sanzenmori has a spring-like label. The first aroma is a sweet fruity peach aroma 🍏 The second sip has a green apple-like aroma with only a hint of sweetness 🍏 The second half of the bottle is even less sweet and the dry bitterness prevails. The sake is super dry, with a sake strength of +16 to +17, and the final taste is crisp and sharp! It was delicious with a gorgeous aroma of freshly squeezed sake and a dry, delicious bitterness 😊.

It has been a while since Ippodo's last light nigori. The top clear water has a sweet and sour taste, and the sweetness is slight. When mixed with orikori, the sweet-savory taste of the koji is enhanced with a hint of bitterness. The fresh and refreshing sweetness and bitterness finish off the nigori, making this nigori sake to my liking! It's so delicious that it will be gone in no time. I can't stop refilling 😋.

It is a Jungin Nama-shu brewed with Misato Nishiki from Hanayuup ❤️ with a bright red-pink label. When the bottle was first opened, it had a fruity aroma and was very juicy! I thought it would end up just being sweet, but later on, a slight sourness and a dry, bitter astringency also followed. After a few days from opening the bottle, the sweetness that was prominent on the first day was suppressed, and the bitter-sweetness and astringency became balanced and delicious. Fresh and gorgeous, it is easy to drink and delicious!

Junodai Unrefined Nama, polished to 35% rice polishing ratio. It has a gorgeous standing aroma and a fruity overtone! The sweetness and umami rush together, and the spicy bitterness gives it a sharp kick. The first half is sweet, but the second half is spicy, so you will never get tired of drinking it. As the temperature rises, the floral and spicy flavors merge! The glass is quickly emptied, so you will want another glass as soon as possible. It is a delicious sake with no peculiarities at all, and it goes down smoothly because it is so smooth and easy to drink.

When poured into a glass, Kasumizake becomes slightly cloudy. The sweet taste fills the mouth with a refreshing sweetness, which is followed slowly by a bitter taste. The sweetness and bitterness are well balanced and delicious 😋. After about 2 days from opening the bottle, the curd is removed and the taste becomes even softer and mellower. It is a fresh and beautiful sake that you can have many more cups of. ☺️

Karahashi label by Homare Sake Brewery. Unfiltered unpasteurized sake made from sake rice Yume no Kou. Fruity ginjo aroma. The aroma of melon and sweetness, followed by a slight sourness and bitterness, finally fading away with a slight spiciness. Although it is unfiltered raw, there is no bitterness or peculiarity, and the impression is of a soft, sweet, umami taste. After a few days of drinking, the balance between sweet and spicy has improved. It is a delicious sake that is so easy to drink that it makes you want to drink more and more. ☺️

It's the first snow of the year, so I'm going to make the first Kurakura Shibori. ☃️ At first, it smells like green apples. The sweetness is moderate with a little sourness. It is fresh and refreshing, but the umami is rich and delicious.

Izumikawa's Funakuchi. It is a slightly orizumi (orizumi is a slightly cloudy, raw sake), so the first thing to drink is the top clear liquid. The aroma is still young and melon-like, with a soft sweetness and a tangy, spicy bitterness. The balance of sweetness, spiciness, and bitterness gradually improves. When mixed with ori, it becomes slightly cloudy. The spiciness subsides and the sweetness increases, creating a mellow mouthfeel that keeps you coming back for more. It is a very fresh and delicious sake that can only be drunk at this time of the year.

The first bottle of 2024 is Tazake, zodiac sign bottle🐉. When poured into a glass, a sweet aroma rises to the surface. The sweet flavor fills the mouth, ending with a slight bitterness and a gorgeous aroma. As the label on the back says, it's a Cho-Ichiryu sake. ☺️ Thank you very much for your support this year 🎍.

When you drink the top clear liquid, it is not too sweet, but has a nice sharp taste with a moderate spiciness and bitterness. If you mix it well, it turns into a light cloudy color with a rounded taste and a gentle sweetness and umami of rice in the spicy bitterness. It is a rich and delicious sake with an alcohol content of 17 degrees Celsius. ☺️

We opened a bottle of Shizenkou's 馥郁 Junmai, which we drank a year ago and enjoyed so much that we decided to slowly savor it in a bottle this time. The first impression is of sweetness, but as you continue drinking, the acidity and bitterness mix with the umami to create a multi-talented flavor. The balance of sweetness, umami, acidity, and bitterness is so good that you will never get tired of drinking it. On the second day after opening the bottle, the umami deepens and the spiciness comes out moderately, which makes the sake go further. It goes well with Japanese food such as simmered dishes with dashi broth! It is a delicious sake that is soft and easy to drink at 15 degrees alc. ☺️

The annual winter event, Hirotogawa Nigori Nama Sake! I opened the bottle gently, and as expected, it was overflowing 😅The abundant carbonation is proof that the sake is still alive. The sweetness and richness of the rice spread through the supernatant, followed by a slight bitterness. The aroma is elegant and wonderful. When stirred further, the sweetness is reduced and the umami bitterness increases, leaving it clean and crisp. It is a very delicious nigori sake with a smooth mouthfeel.

The first Kuroemon! When poured into a glass, it has a slightly yellowish color. A honey-like aroma emerges, with sweet and bitter tastes and slight acidity. The last is again an aroma of matured honey. It seems to have been aged for about 2 years in 2021BY, and the aroma is rich, mellow, and powerful. Even when heated up, the strength remains the same and the flavor is even richer 👍.

This is an original from Gonoi Sake Brewery and brewed by Akebono Shuzo with a central label. This nigori sake is made with Mizuho Kogane and contains a lot of ori. The supernatant is sweet, sour, and juicy, with a delicious bitterness in the latter half. The top clear layer alone is delicious with just the right amount of oriki! Shaking the bottle and stirring it makes it even richer and more fragrant, and you can't stop drinking more. The balance between fresh, refreshing sweetness and umami-bitterness is very nice, and we have found a high-level nigori sake 😋.

Ura-Roman is a blend of several Junmai Ginjo classes from the Romain series. When poured cold in a glass, it has a gorgeous aroma, followed by a full sweet umami flavor, then acidity, spiciness, and finally umami bitterness, with a good balance of sweet, spicy, and sour. When heated, the sweet umami expands and the spiciness sharply cuts through the sweet umami. Heated sake is perfect for this time of year when the weather is getting colder. ☺️ You can enjoy the different tastes of cold and heated sake 😊♪

Today's sake is a special junmai from Hirotogawa. It has a light, refreshing mouthfeel that is hard to believe it is 16 degrees alc. The umami of the rice spreads slowly, followed by a slightly tangy, bitter taste. The aroma is modest at first, but as the temperature rises, a slight melon aroma emerges. The melon aroma and flavor is stronger on the second day after opening the bottle. It is a beautiful sake that is soft and fresh and should not be drunk too much 🥰.

We will have a freshly squeezed raw sake from Shiboritake! The aroma when the bottle is just opened is gorgeous🌸The alcohol level is 20°, which is a strong style, but it has a light, refreshing taste with a slight sweetness and umami bitterness from the rice. The spiciness and sharpness of the sake makes it easy to drink without getting tired of it. It is a strong umami-guchi sake that makes you feel warm immediately, probably because you drank it on an empty stomach. ☺️

The first Sairai in a long time is an unfiltered, unpasteurized sake. It has a gorgeous aroma of grapes, acidity, sweetness, and bitterness. As you drink more, the spiciness and the umami double in size. The rich, dark flavor and aroma unique to unfiltered sake was delightful and delicious 😊.
