☀️ Just finished the bottle and the reserve bottle came out. They asked, "Would you like the bottom of the bottle and the sealed opening in separate glasses?" I said YES👍 of course 😎. The opening 🍶. Clear acidity. Standard sweet and sour, sweetness seems weak. Clearly crackling carbonation🫧. Wooden vat aroma comes late. Very fresh😋. Bottom of the bottle🍶. Carbonation was gone🫥. The acidity is rounded and cloudy. It was still oxidized, but the aged sweetness and flavor was stronger. It has a milder flavor 🤗. I didn't know the number of days after opening the bottle, but anyway, I feel that good sake changes rapidly after opening the bottle 🤗.

☀️ Thin sweetness and umami. The umami prevails. It has a bitter aftertaste, but it is easy to drink. It has a nice sharpness that is characteristic of alcohol addition 🤔. The ginjo aroma with a low center of gravity and the sweetness that gets sweeter the more you drink it 🤗 was nice.

Also known as Ura-Nabeshima Made from a blend of several types of junmai ginjo The nose is green apple-like but restrained 🍏. The palate is preceded by a gorgeous fruitiness that is typical of Nabeshima. The umami gradually emerges, and the complexity and richness take a firm hold. Then it turns bitter with a slightly heavy finish.

One of the Astral Plateau of Shinsei One of the rare one The aroma is rather mild citrus 🍊 The taste is impacted by the deep acidity from the white malted rice It changes its expression in the mouth every moment. Layers of umami cover the palate afterwards. The lingering aftertaste is a woody aroma of oak barrels.

☀️ Sake rice is Dewa Tsanzan 🌾. I don't feel the scent. Maybe I just don't feel it due to hay fever 😅. Slight sweetness and a little bitterness. It has a rich ginjo aroma when you swallow it. Taste is a bit mild for Eikoufuji 😄.

☀️ Black Label ❗️ Hanamup's Sake Mirai 😳 This is very promising 😆. Fresh apple taste 🍎. The sweetness is strong and moderately sour. There is an astringency in the aftertaste, but the sweetness also persists and is perfectly aligned with the sweet and astringent umami. At times it feels like you are eating the fruit 🤗.

☀️ I missed the drawing for this one too 😭 I asked for it out of frustration 😭 The color is a bit amber. Uetatekko with a ginjo-style aroma ☺️ It is sweet like a ripe apple and has little acidity. Leaves a mellow ginjo aroma as it goes away😊. Damn, I want to drink Jikin-chan at home🤣.

Although, some of the bottles have been open for a while, so the sweetness and carbonation will likely change from unsealed 🤔. Normal. Middle. The usual snowman. Rice🌾 feeling and sourness about the size of grapefruit. It has a strong flavor. [UA] Left. The rice taste is the same. The acidity is milder. The taste is cleaner than the normal. The white color is also a little lighter. 😶‍🌫️ UA Snake. Right. It's like adding carbonation to UA. Schwash is the best. ☝️ I think UA was the easiest to drink 😁.

☀️ The picture and story on the label are interesting. I got a kick out of "My darling Princess Niggoli" 🤣🤣🤣 Of course you can see the rice in the nigori 🌾. It starts with the sweetness of rice🌾 and has a bitter aftertaste. The sweetness is also weak, although less acidic, and there is a depth of flavor. Occasionally there is a subtle crackle🫧. I thought the composition of this sake was typical of Tatenokawa🍶.

☀️ This is a white sairai named "Hanazumi". It is different from "Usugiri", which is also a white Sairai. It starts with a "ummm" taste like Sairai, then sweet and sour like an apple, and finally ends with a hint of rice. Unusually for Sairai, it is not refreshing but mild 😄.

☀️ I knew Shinsei had a cool white bottle 🤩. I wish I had a bottle at home 😍 It would look so cool on the shelf 😎. I think Shinmasa is the first brand that attracts me just by the bottle 😆. It's sake 🍶. Sweet, sour, wooden vat. There is a sense of trust that the flavor comes right into the zone of expectation 🤗.

☀️ The brand name is registered with Abe, but it is a collaboration sake with the craft gin "Thornballs" 🤝. It is a sake brewed with gin thornballs instead of sake in the manner of kijoshu 🍶. Hence the item is "miscellaneous sake". Well, I'll have some 😋. It seems to be orikara-mi sake, with grains of rice floating on the surface 🌾. The glass smells sweet like lychee 😊. On the palate, it has a clean acidity and a slight sweetness 😋☺️ It tastes like grapefruit and is also good 😎. ☀️ It's the Yatanishiki that I missed out on in the lottery 😅. I drank it to drown my disappointment 🤣. I feel sweetness and unusually astringent 🤔. Somehow the sensation is not like Jikin 🤔 It also seems to have less sweetness 🤔 However, the mouthfeel is clean and easy to drink 😙. The glossy texture and the way it flows smoothly down the throat are wonderful 🤗.
