I'll have a third bottle of Shinsei Viridian ✨. This store always keeps 3-4 bottles of Shinsei on hand, which helps when I have a seizure 😋. The aroma is fruity with a hint of melon and just a hint of wood vat brewing! The taste is lighter, fresher and more acidic than the aroma, with a pleasant sharpness in the mouth 🥳. I personally feel that it is more of a food wine than a sake to be enjoyed on its own. When I think about it, all of the sakes we drank this time were all delicious food wine type sakes 🍶.

The second bottle is Shinshu Kamerei Hitogokochi. The aroma is mild, with hints of sweet nuances like caramel and melon. The first sip reveals both a full flavor and a light mouthfeel, with an elegant sweetness like that of wasanbon (a type of Japanese sweetener). The aftertaste is crisp, with a slight dry dryness that keeps you from getting tired of drinking this delicious sake. I like this sake so much that I want to stock it at home, but I can't open the one at home because it's hard to find 😭

We will have Jikin at the usual place! I'm looking forward to it because it's my first time to drink Jikin's special pure sake! The taste is fruity with a lot of rice umami, but the aftertaste is clear and crisp. Compared to other Jikin, it's more about the rice flavor rather than the sweetness and umami, so it's quite good as a food sake! I paired it with vinegared appetizers, which went well together and was quickly consumed 😭

A nightingale in the garden. We received an ibisubikari. When I heard the name "Inabikari", I thought it would be dry, but contrary to my expectations, it has a fruity flavor. The acidity was also very strong, and it had the refreshing feeling of a summer sake, so I couldn't stop drinking it as I came to the izakaya in a sweaty state. The steamed clams went very well with the sake, and the broth was delicious and soaked into the liver 😆. By the way, the name "iguisu no inabikari" comes from a legend that a year with a lot of thunderstorms brings a good harvest of rice. ⚡️

My usual favorite restaurant When I handed them a bottle of Tobiroki that I had brought as a gift, they said, "We have Tobiroki at home, too. I had never had a special pure sake before and was looking forward to drinking it with some snacks. The label is too austere... I love the characters that look like "The Sake" 🤤. Take a sip! Oh...! It's as light and dry as I imagined! The aroma is subdued, but there is an elegant ginjo aroma wafting through the air. The taste is light and delicate, and the umami of the rice is conveyed directly to the palate with a good sharpness. The yakitori I ordered with salt, and the sweetly seasoned fried eggs all go well together! As expected of Asproki! It was a great sake. ☺️✨

I got Sairai, which is limited to restaurants 🍶. I drink a lot of Sairai because I like its clear sweetness, but this is my first time drinking S's, so I'm looking forward to it 😋. The aroma is sweet and mildly fruity, reminiscent of muskmelon, banana, and white peach, but with an elegant flavor that is understated and not too showy. ☺️ Light and clear on the palate, with a freshness and a slight gassy feeling that makes it easy to drink and keeps you coming back for more 😌. The fresh sweetness is typical of Sairai, but the light and sharp acidity rounds out the aftertaste and makes it easy to pair with a meal ✨. I was pretty drunk at the 4th sake on this day, but it's a beautiful sake that you can enjoy until the end, so please try it if you see it 😋.

I asked for a variety of sakes to try 🍶. When I poured it into the glass, the fruity and gorgeous ginjo aroma spread out, and I sipped it with fruity and subtle floral nuances 😋😋. The attack is impressive with a strong unfiltered raw sake-like attack, and while you can feel the alcohol, it is softly enveloped by the alcohol, making it smoother and easier to drink than you might imagine 😆✨. The sweetness is moderate, but the umami of the rice spreads slowly and is well neutralized by the moderate bitterness and richness, and it goes so well with ham and cheese cutlets that I kept muttering how delicious it was 😌. This is why I can't stop drinking sake 🥳.

We received Hatsukarubai Ume (red plum blossoms) for the first time! I found Penguin's Kanken Ume that Jay & Nobby reviewed a while ago, and I thought, oh! I thought, "Oh! When poured into a glass, it has a fresh and juicy fruity aroma reminiscent of apples and pears, but the aroma is well-balanced so that it accompanies your meal without being overpowering. ☺️ When you put it in your mouth, it is characterized by a light and refreshing mouthfeel, and you can enjoy a slight taste of white peach 😌. The acidity is soft and perfectly balanced with the sweetness, and the aftertaste is clean and crisp with a light lingering aftertaste that goes great with rice✨. Unlike the appearance on the label, it had a sharp impression of a light and dry type 😌. Also, if you look closely, you can see "kankoubai" written in katakana on the penguin's chest hair, which made me grin 😆. Penguins, not to be underestimated ☺️✨

I can't help but think of Osamu Tezuka when I hear the name "Yonotori. When poured into a glass, it shines with a golden color like a kijozo-shu and tastes like honey and vanilla, and looks delicious ( ˇωˇ ). The first sip of this sake has a sweetness that is like caramel and honey, followed by a refreshing sharpness, and it's delicious! I looked closer and saw that the alcohol content is 12%! That makes it easy to drink! Also, the box looks like the Shogakukan dinosaur book I used to read a lot.

The aftertaste is clean and refreshing with a hint of bitterness accenting the finish. ‼️ I love the lingering fruitiness that lingers after swallowing: ☺️ It was a great match with raw oysters and I could have shoveled it down endlessly ( ˇωˇ ). As expected from Shinsei‼️ The name "eXcellent" is not for nothing! It was a wonderful sake that even 3,000 yen for a single brew would be considered cheap 🍶✨.

Hatsu Shinshu Kamerei: ‼️ When poured into a glass, it has a delicate apple-like aroma and a hint of sweet aroma of rice, with a calm aroma that can only be achieved by fire-roasting 😋. In the mouth, the soft umami and mild sweetness of Yamae Nishiki spread slowly, yet the acidity is moderate and the overall taste is round and gentle. ☺️ The aftertaste is clean and crisp, with no cloying taste and a fruity aftertaste that lingers elegantly, making it an easy-drinking, well-balanced sake ✨.
