Another one this time. It is Takatsugawa by Fusozuru. It is from Shimane Prefecture. I saw Hiraccio-san drinking it and longed for it 🙌. First at room temperature. The color is a solid yellow. The aroma is mildly savory with a hint of maturity. It smells like caramel, soy sauce, and cream cheese. The mouthfeel is gentle. The palate is drowned in the complex flavor of aged rice with a moderate acidity. When heated up, it becomes smoother and more balanced, and you can just keep on drinking it. It has a relaxing and soothing taste. When tasted with a thick Shigaraki-ware sake cup, the warmth of the clay makes it taste even better. The warmth of the clay makes it even softer and happier 💕. This is Asahi Kiku Arahashiri, a Fukuoka souvenir 🍶. It's in a nice looking bottle, but it seems that during the new sake season, Fukuoka's sake is often served in these stoppered bottles. I thought it was nice because it can be corked tightly so it is easy to reuse. The initial aroma is slightly sweet, like cooked rice. In the mouth, it has a mild sweet flavor with a slight astringency. It finishes with a slight bitterness. The astringency was a bit strong, but the sake was delicious with a calm and full flavor typical of Asahi Kiku ✨.

The last one is Fusozuru. It will be served warm. The top-tasting aroma is that of thick rice. The mouthfeel is clear and the umami of rice is directly conveyed. The aftertaste has a slightly matured or aged feel to it, but I think this is what makes the umami so convincing. The finish is soft and fluffy, with a soft acidity and astringency. The image is quite dandy and austere. Fuso is an old Japanese alias, but when I think of Fuso, I think of the Mitsubishi Fuso truck or the battleship Fuso of the Imperial Navy. This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good.
