I was in Akashi on a business trip 🚄 First time I got off at Nishi-Akashi and had local sake heated with Akashiyaki 🐙 which I haven't had in a super long time. It feels spicy at first but the sweetness comes later 😯 Surprisingly, I like it a lot 😊. I'll drink it again when I go back to Akashi 😁.

It is a refreshing and royal sake of Echigo, light and dry, and fits for dinner. The brewery is located next to Niigata Prefectural Ojiya High School, where I went to school, and the main brand is Chojazakari.

This Sake is slightly dry with an earthy aroma. There are flavors of mushroom and wood. Sweetness and acidity are present towards the end. The flavor profile is different from other Niigata Sake I have tried. Guess I need to drink more Sake. 😁

This is a seasonal sake from spring to summer of Onikoroshi, the main brand of the Uota Shuzo brewery. It is a junmai daiginjo unfiltered raw sake that is stored in a snow cellar. It is sold at the brewery, at a roadside station in Kiyomi, Takayama City, and at supermarkets in Takayama City. The color is hazy with lees, and it has a rich aroma of rice like doburoku. The rich flavor is reminiscent of onikoroshi, and the sweetness spreads out from the rich umami. It is one of Misobagi's favorites with a long-lasting aftertaste.

A drinking friend of mine wanted to drink a bottle of Takezuru by Toshi Ishikawa, who has moved to Tsuki no I. So I agreed to accompany him. We had it heated. The first aroma is like a matured Shaoxing sake. The first sip had a matured Shaoxing sake-like aroma, and the second had a mildly sweet taste with a Shaoxing sake-like acidity and umami. The sweetness is still there, but it's the kind of fully fermented sake that you can drink while eating snacks. It was delicious 🍶✨.

I've been saving it for over 2 years because it's my favorite brand, but I've decided to open it up. I'm going to enjoy changing the flavor slowly from here ✨. When you open the bottle and pour it in, the aroma is like sweet baked sweets like sponge cake or kawara senbei. The mouthfeel is round and robust. It is round and robust on the palate, with a punch of spiciness and a tangy sourness. It also has a rich, thick flavor and a sweetness that spreads gradually. The balance of sweet, sour, spicy, and bitter is exquisite, not just strong and heavy, and the taste has a wide range of deep flavors, including a confectionery, grain, and rice feel! This is the second brand that has really caught my attention after "Akagisan," and I am very happy with it. It is a bit pricey, but I would like to try the sake made from the original sake yeast if I see it 😌.

At home. First time drinking alcohol. I finally got to know how to read it. When I first tried it as a hiya, I felt a bit of alcohol in the throat, so I tried it again with the recommended lukewarm temperature... it was beautifully mellow and the sweetness and umami increased❗️. Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.

The second day in Miyako, Kamaishi, and Kesennuma🎵 was spent in Kesennuma, the first visit to this area in 38 years. During the day, I was impressed by the ruins of Kesennuma Marine High School, a relic of the Great East Japan Earthquake, and at night, I was thankful to be alive thanks to the seafood of Sanriku. On the second day of our fulfilling Miyagi trip, we had a special menu at the hotel: Otokoyama bonito sake. Normally, I would not buy this kind of snack, but the woman I was with from Ichinoseki recommended it as a great dish. Even if it's not bonito, it washes away the umami and goes well with oily sashimi. It is also good when served cold, as the acidity is more pronounced than with cold sake. Ebisu is also a good omen as it is a sake from the sea. It is a pity that Mizutori-ki Hiyadoroshi was sold out.
