National Sake Fair 2025 Day 2 ㉚ Gifu ⑥ Oda Sake Brewery in Takayama City I remember drinking vacuum-packed sake at the Japanese Sake Festival. Annual shipment is 700 koku. They say they are the originator of many Onikoroshi sake breweries in Japan. I think the real brand name is Hida-boast. It's under the umbrella of Hidagura Corporation, a sake brewery revitalization company. Polishing ratio 58%, Hidahomare 18-19%, Sake degree +10, Acidity 1.9 Amino acidity 1.9, 901 yeast, 1754 yen. It tasted sharp and dry 😅.

I was in Akashi on a business trip 🚄 First time I got off at Nishi-Akashi and had local sake heated with Akashiyaki 🐙 which I haven't had in a super long time.　It feels spicy at first but the sweetness comes later 😯 Surprisingly, I like it a lot 😊. I'll drink it again when I go back to Akashi 😁.

A drinking friend of mine wanted to drink a bottle of Takezuru by Toshi Ishikawa, who has moved to Tsuki no I. So I agreed to accompany him. We had it heated. The first aroma is like a matured Shaoxing sake. The first sip had a matured Shaoxing sake-like aroma, and the second had a mildly sweet taste with a Shaoxing sake-like acidity and umami. The sweetness is still there, but it's the kind of fully fermented sake that you can drink while eating snacks. It was delicious 🍶✨.

When you open the bottle and pour it in, the aroma is like sweet baked sweets like sponge cake or kawara senbei. The mouthfeel is round and robust. It is round and robust on the palate, with a punch of spiciness and a tangy sourness. It also has a rich, thick flavor and a sweetness that spreads gradually. The balance of sweet, sour, spicy, and bitter is exquisite, not just strong and heavy, and the taste has a wide range of deep flavors, including a confectionery, grain, and rice feel! This is the second brand that has really caught my attention after "Akagisan," and I am very happy with it. It is a bit pricey, but I would like to try the sake made from the original sake yeast if I see it 😌.

Sake meter degree +2, acidity 1.8 (reference) Fat 5/7, opened 5/23 I wanted to drink a dry sake from Kochi and was attracted by the label that looked like a pattern of playing cards I used to have at my parents' house 🤣. The brand "Bishio" is a new brand that started in 2014. It is one of the Junmai Ginjo series that is based on the concept of "elegant sweetness reminiscent of honey" and is part of a trilogy that includes "Kitashizuku", "Gin no Yume", and "Omachi". The aroma is almost imperceptible after opening the bottle. In the mouth, it has a fruity, fruity aroma and flavor, but at the same time, the alcohol is very strong. The acidity is moderate and not harsh. The acidity is not too strong, but it's more spicy and tingling than the number 😅. I tried to drink it after 4 days, which is unusual for me, but although the mouthfeel got better, the strong alcohol feeling didn't go away. The aftertaste is light, so it would be classified as light-dry. It's like a Tosa sake in that respect 😊. Unfortunately, it didn't suit me and was disappointing 😅. Oh! Maybe I should have tried heating it up 🤔.
