The richness of umami comes from the mid-palate and is combined with a hint of hineyness.
The sweetness extends to the back palate.
A brand recommended by someone I used to know.
I happened to find it at a liquor store I sometimes go to, so I bought it!
I found out that there are only a few dozen stores in Japan that carry it 😳.
Cold sake

This is the fourth brewery on a tour of four breweries in the Daisen area of Tsuruoka City, Yamagata Prefecture.
The last one was sold directly to the public.
It was served in a wine glass, as it was awarded the gold medal in the "2024 Wineglass Sake Award".
When this is written, my impression is pulled and I feel it is like white wine.
But it was delicious with a grape-like sweetness.
Only one brewery sells directly to the public.
There are four breweries in a small area, so I think they should be able to attract more people if they do well.

This sake is made from rice called "Koudou Shinko".
I bought this sake because it was recommended by a sake brewer.
It is a little sweet with little acidity and is refreshing and delicious.
