Today is the first one, Shirakagesen. At first I thought the acidity was too strong, but after the second glass it became normal. It goes well with meat, and it's delicious after all.

The rice polishing ratio is 55%, but it says Yamahai Junmai, so I used the tag Junmai.
The sake is lightly colored. The aroma is like yogurt.
At room temperature, you can taste the sweetness first, and then the sourness spreads to your mouth. When heated, the sweetness spreads to the palate and the acidity kicks in.
It is a peculiar sake, but it goes well with strong-flavored foods and meat and potatoes.
It's delicious!
