Sugihara Shuzo, "Japan's smallest sake brewery", brews Chiyonohana, a local brand of sake such as Imi. This special honjozo is the first of their freshly brewed bottles. The appearance is a slightly pale yellow-green color with a misty, very faint orikara mist! Orikagara-mist delight! The aroma is subdued and gentle, yet aromatic. Fruity with apple, pear, melon, and blue banana peel, with a coolness of alcohol. The rice aroma is about the same as that of Kamishinko. The smooth texture gives off a thick sweetness that is juicy and contains the umami of the rice, and the edgy stimulation of the alcohol passes pleasantly through the palate and into the nose. The fresh freshness of the freshly squeezed flavor flows beautifully and finishes with the gentleness of orikara. The concept of the Kokoromi saké has been around since last year, and it is said to be "unpolished luxury. This year's theme is "Shitakoya. It is a low-polished, low-alcohol sake. Shishimai Fuunroku Part 3 The next point of rest and ga-in is Tenjo Yumegen This label commemorates the 100th anniversary of Maruka Kensetsu, located in the same area as Nakayu Sake Brewery. The contents are probably the same as the regular Tokujun, but it is only at local festivals that this kind of sake is served as a sacred sake. Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶.
