This brewery is located in Kakamigahara City, Gifu Prefecture.
The sake rice is "Hidahomare" produced in Gifu Prefecture.
As the name suggests, it is brewed with Nagara River subsoil water.
The sake is freshly squeezed.
It has a well-balanced flavor with a hint of bitterness and freshness that only freshly pressed sake can have.
The taste is well-balanced with a hint of bitterness and fresh umami.

I bought it expecting it to be a little dry, but maybe it's because it's jun-dai? Very fruity and easy to drink 😆.

I've always preferred sweet sake, but maybe it's because I've had so many different kinds of sake. I'm now able to enjoy sake that I used to find dry 🍶 🤭.
