For my first saké, I chose Tamitsu's "Malic acid" (apple acid) 🍶. True to its name, it is a refreshing sake with a harmony of acidity and umami like an apple liquor 😊. The bottle design looks like a wine bottle. It is very juicy and low alcohol sake that you can easily drink on its own. It will sink into your summery body over the weekend 😁.

This Tottori sake is made from Tottori's original sake rice "Strong" (🌾), which was once cultivated in the Showa period (1926-1989), but was later revived thanks to the efforts of those involved. Rokumaru" refers to the 60% rice polishing ratio. It is characterized by a strong acidity, and has a full-bodied, robust aftertaste! Maybe it would be good to pair it with a strong-flavored entrée 😄.

Purchased at the Hokkaido Umaimono Kan. This one is named "Kita no Katsu" after the land of Hokkaido and the founder, Katsusaburo Usui🍶. It has almost no aroma, but when you drink it, it is a classic flavorful, mellow, strong, delicious, and well-balanced sake with a crisp, mid-palate finish 😊. It seems to go well with sashimi and other seafood!

They are the brewery that won the highest "Champion Sake" at the International Wine Challenge in London. The bottle label evokes a good impression of overall gorgeousness 🍶, and since it is 100% Aizan, expectations are high 😊. The aroma is fruity and white peach-like 🍑, the mouthfeel is soft, the sweetness and umami are well-balanced and gentle, and the moderate gasiness and the acidity unique to the sake's sake yeast aftertaste make it smooth and smooth on the palate! The heat has returned after the typhoon has moved away, and the sake is being drunk with a lot of enthusiasm (^_^...)

This "Senkohana" is an assemblage of "Modern Senkou Mukunin" and "Classic Senkou Mukunin" and is a limited brew for this season. As the soft drink-like bottle suggests, it has a lychee-like aroma and a juicy mouthfeel with a sweet and sour taste and a little bit of a squishy feeling in the mouth! It is low in alcohol and is a truly delicious sake that can be drunk by itself 😊. Thank you for the drink!

Sake brewed in Japan's northernmost brewery 🍶. It has a light, mellow, refreshing taste with a pleasant aftertaste 😁. It can be enjoyed at a wide range of temperatures, but I think cold sake is the only way to go this time of year! Pairing with strong flavored food and seafood seems to be a good idea. ☺️

It is said to be a junmai ginjo-shu made from 100% "Shizuku Ehime," Ehime Prefecture's first rice suitable for sake brewing, which won the highest gold medal at the Wine Glass Delicious Sake Awards 2020. The aroma is slightly fruity, the mouthfeel is soft and gentle, the umami from the rice is predominant, and the spiciness and bitterness come out in the back of the mouth. My personal impression is that I would rather drink it leisurely as a companion to a meal than by itself 😊.

This "Sakurafukiyuki" is a brand created in the Meiji era, and is more cosy than "Kamo Kanehide" from the same Kinko's brewery 😀. The aroma is subtle, and the fruity sensation flows quickly in the mouth, with a mellow, umami aftertaste. It is a little more classic, and is very typical of Japanese sake 🍶. ☺️

Limited to one bottle per person. Rikuwada" is a rare sake rice cultivated by Mr. Takagi, the chairman of the brewer of "Jyushiyo" and is grown by only a few farmers and in small quantities. Currently, only "Hanayuup" has inherited the rice as a raw material for this junmai sake, and Mr. Takagi provided technical guidance to the brewery. It is a gorgeous sake with a slightly sweet aroma, a refined sake quality like Wasanbon, a good balance with a slight acidity, and a good sharpness 🍶. Tonight we had it with sukiyaki 😁.

This low-alcohol sake is more like a white wine than any other sake I have ever tasted, with low acidity and high sweetness from wine yeast. When I did a blind test, I found that the top aroma was also wine-like, so I could have mistaken it for white wine. The ingredients are listed as rice and rice koji. I wonder if it would go well with western style dishes.

Kaneizumi is another brand of Aihara Shuzo, famous for Amego no Tsuki. This white lightning bolt is a spot product. On the palate, it has an elegant and discreet mix of sweetness and acidity, with a sharp finish that cuts through with a touch of bitterness! The bitterness is a nice accent, making it a very tasty sake that goes well with the season 😋.

Ordered at a bar I stopped by on my way home from a business trip to Osaka😊. It's basically light and dry 🍶, but it has a fruity aroma and a good overall balance. It has a sharp aftertaste and can be paired with a variety of entrées! I heard it's written in kanji as "mouren" 😃.

They call it "Jinden" instead of "Kanda." It is a new brand🍶 with a low milling ratio of 90%, using Kumamoto's native No. 9 yeast, and is a realization of the "Domaine Wasumi-cho all the way" where sake is brewed using only locally grown rice. The aroma is subdued, but in the mouth, it has a robust umami of rice, a subtle fruity taste, and a nice lingering acidity that follows afterwards 😄. It has a nice sharpness that is close to dryness.

I was told that it is a limited-quantity sake that can only be purchased at special dealers in the Kyushu area, so I bought the last bottle at Sumiyoshi Shuhan in Hakata Station during a recent business trip 🍶. It has a sweet and sour aroma like green apple, a smooth mouthfeel, and a sweet and sour taste that spreads in the mouth and has a nice sharp aftertaste 😊. The assertion of the acidity that rises especially in the latter half is pleasant!

Small-capacity, easy-to-drink can type. This is the second can following the "Dewazakura Ginjo Can". It is a classic Yamagata sake with a rich, mellow flavor that is quite robust, and is suitable for sipping in small sips. ☺️ It is a versatile sake that can be paired with any dish, but the grilled Hokke fish was the best match 😊.

Miyazaki Prefecture 🍶. You can't find it in liquor stores or supermarkets in Hiroshima city, so I bought it online🙂. It is a four-stage brewing process using "Hanakagura," Miyazaki Prefecture's preferred rice for sake brewing, and is mentioned as a sake with a clean, umami flavor. A classic type with a rich flavor and a mellow aroma that spreads in the mouth as you drink it. It has a little bit of alciness 🤔. I think it is suitable for a mealtime drink as it has a smooth aftertaste 😊It goes well with cheese 🧀!

Hana Hato is famous for its Kijo sake. I don't like too much sweet sake, so I wanted something refreshing to drink in the hot summer, so I chose this one 😁. As the name "dry" suggests, it is a refreshingly light and dry sake suitable for summer! It has a slightly alkaline taste, but the mouthfeel is slightly fruity and the aftertaste is crisp and smooth.

The word "limited" is weak... The sake dealer Mr. Yamada's original "sixth sense" that leaves it to the inspiration of the drinker 🍶 The rice polishing ratio, sake degree, and other specs are also undisclosed. The bottle was opened with excitement: ☺️ The nose has a slight pineapple flavor, and on the palate, there is a distinct pineapple 🍍juice 😋. Anyway, it's a fruity and modern-leaning nama-shu, a summer sake! I wonder if there is also a "Type B" since it is labeled as "Type A".

Shizuoka sake named after the Buddha Amitabha, which means infinite life, and made with 35% polished Yamadanishiki for the koji rice and 50% polished Miyamanishiki for the kake rice. It is a limited edition sake that is shipped only twice a year. ☺️ As one would expect from a daiginjo, it has a pear-like fruity aroma, juicy and full of flavor, and a crisp, clear aftertaste 😋. The 1,600 yen range for these specs is very cost-effective! Served with grilled Hokke (Japanese bonito) ♪

Due to the time limit of the office's summer party, this was the last selected drink 🍶. I heard there are black and white labels, but I'm not sure which one it is💦. When you drink it, a fruity sweetness like white peaches softly spreads in your mouth. Then, it was neutralized by a moderate acidity and quickly quenched my thirst 😊. It has a light sharpness and is easy to drink in summer 🍶!
