Urasato is a new brand brewed by Chikara Urasato, the 6th generation brewer, using contract-grown Gohyakumangoku (five hundred million stones) in a field near the brewery. It has a gorgeous melon aroma, a slightly gassy mouthfeel, a hint of banana-like sweetness followed by juicy freshness, and finishes with a gleaming bitterness 😆 Overall, it is full of fruity sensations that are intoxicating! Thanks for the treat 😋.

It is a seasonal sake brewed by Iwasaki Shuzo, which produces only about 300 casks per year. They also have other limited edition sake such as Active Summer and Active Sky. ☺️ The combination of a fresh, fizzy, green apple-flavored aroma, umami, acidity, and a mild mouthfeel makes it easy to drink and makes for an easy cup. The flavor is further enhanced by mixing in the ori. It has a dry and refreshing aftertaste, and can be enjoyed on its own or as an in-between-dinner drink!

The origin of the name "Toyo Bijin", a famous sake from Yamaguchi, is said to have been named by the first brewer in memory of his late wife. The aroma is almost imperceptible due to a stuffy nose, but when you drink it, it has a slight pineapple feeling, a mellow umami, a soft sweetness, and an acidity that cuts through nicely 😋. It was well-balanced and very easy to drink 🍶!

It seems to be a limited edition sake🍶 from Kinko's Shuzo, which brews Kamo Kanehide, and is only available at local supermarkets. It has a refreshing ginjo aroma, a greefy acidity and bitterness on the palate, and a gentle, clean sweetness like wasanbon at the base. The sweetness and bitterness gradually fade out in the aftertaste. It is very easy to drink and seems to go well with western food 😊.

The first Mimuro Sake! SAKE COMPETITION 2024 Junmai Sake Category Gold Winner, according to the SAKE COMPETITION 2024 Gold Winner in the Junmai Sake Category. A classic low-alcohol sake brewed in Miwa, the birthplace of sake brewing🍶. The first thing you notice is the fresh ginjo aroma that smells like ramen, and when you taste it, it is so juicy and fresh, it just pops on your tongue 🫧 It is followed by sweetness, umami, and a smooth acidity that cuts through gently 😁. This is a very good wine!

The name "Bon Time," a mix of French and English, was named with the hope that people from many countries will enjoy it, transcending cultural genres. I like Tomikunaga's sake 🍶, which is a white malted rice sake 🍶, but this one is also good😋 with a balance of refreshing citrus acidity and the natural sweetness of the rice. If I did a blind test, I would mistake it for a white wine 😁.

Fuji, and like a crane among a flock of chickens, to excel in the world of sake brewing. The brewery, Ikuma Shuzo, also has a long history, having been founded in the first year of Keio. ☺️ The aroma is subdued, and the mouthfeel is clear, clean, and dry. It has a balanced taste with a slight bitterness in the aftertaste, but it is easy to drink. ☺️

Limited production local sake brewed with Teruhi rice harvested from reclaimed fallow rice fields damaged in the 2014 Hiroshima torrential rain disaster🍶. It is named after the Obayashi district where the rice fields are located, with the aim of "making the village prosperous for the next thousand years." Unfortunately, I saw a newspaper article the other day that the brewing of this season's sake was abandoned due to deer-eating damage this year. We are praying for an early revival. The first impression is a fresh aroma and fruity acidity, followed by umami in the back and a slightly spicy aftertaste, which is refreshing and white wine-like 😀. The low rice polishing (85%) and light mouthfeel made it easy to drink 😋.

I have always been curious about this local sake with its unique and Showa-esque name 😁 (apparently it was created in the 1950s). It is made mainly from Hachitan-Nishiki, a rice suitable for sake brewing produced in Hiroshima Prefecture, and is said to feature a mild mouthfeel that makes the most of the characteristics of soft water brewing. The gap between the impact of the name and the standard sake quality is interesting 😆.

Eiko Fuji's very limited edition sake that only ships one day a year 🍶The innovative bottle that doesn't look like sake and the name Hyper Nova make it very special 😄. They use a new variety of rice from Yamagata prefecture called "Setsuwakamaru", which might be the first sake that uses this rice 😉. The ginjo aroma reminds me of a gorgeous lychee, the mouthfeel has a fresh and piquant feel, and the sweet and tasty but balanced with just the right amount of bitterness, it cuts cleanly through the back palate and is a food sake that I never tire of drinking 😋.

The summer sake was standing a little lonely in the store, so we took it home: ☺️ The sake was named after the 12th head of the family, who was born in the year of Koshi. As it is a nama sake, it is still fresh and robust 😋 You can enjoy the slight bubbling sensation, and it finishes with a sharp dryness and a delicious taste of rice. The back palate is refreshingly delicious with bitterness and astringency 😆.

Limited edition sake from Yamada, a sake shop! The pop-up says "Charming name but authentic special order inside" ☺️If I get lost, I always end up reaching for the limited edition sake 😅. The aroma is fresh, fruity, pineapple-like, with a hint of rice flavor, and the dry, light aftertaste is very pleasant. It has a high alcohol content, but it's dangerous 🍶 because it's easy to drink 😋.

The name "Sunset Orange" came to the brewer while he was watching the sunset over the Sea of Japan. On the back label, there is a mention of bears that have recently appeared in the area, and while thinking of the rich natural scenery, I sipped the sake while also pondering the difficulty of coexisting with nature and humans. The aroma on the nose is gorgeous and slightly melon-like, and in the mouth it is supple, smooth, and juicy, with a fresh and sharp umami, assertive acidity, and a bitter aftertaste that leaves a pleasant lingering aftertaste 😋.

The base is a slightly dry, yet mellow and flavorful local sake 🍶. The color of the sake is "yama-buki" because no activated carbon is used in the blending or filtration process, in order to take 100% advantage of the flavor of the rice and water. It is a well-balanced food sake that can be easily matched with both Japanese and Western food 😄. The picture on the right is the Hiroshima specialty soupless tantanmen noodles we had for lunch 🍜.

I caught a cold🤧 at the turn of the season, and it has been a long time since I had a drink🍶. The brand name is "Tagaji", but the name was changed to "Takaji" (hiragana) because of the desire to create a new world view. The last time I drank their standard Junmai Omachi was very good, so I chose it without hesitation from the store ☺️ It has a pleasant aroma with hints of pineapple and melon, and a gaseous sensation on the tongue. It is a refreshing and fruity wine that you can enjoy more and more!

HAKKO" is the representative brand of Morikawa Sake Brewery in Kure City. The design represents a "big white bird" soaring into the sky. ☺️ When poured into a sake cup, it has a beautiful amber color, a faintly fruity aroma, and a round, mango-like sweetness, followed by sourness and dryness. It is best when paired with grilled eggplant or grilled saury, which are autumnal delicacies!

For the first Kaze no Mori, we chose the standard Akitsuho 657😄. It is a long-selling product since the birth of the Kaze no Mori brand, and at about 1,400 yen, it's a good price for consumers' pocketbooks despite the high cost of living 😆. It has a sweet fruity aroma like white grapes on the nose, and a slight bubbly sensation on the palate as it enters the mouth. I would definitely like to try the other Kaze no Mori sake in the series!

Aluminum can with Hokkaido's natural treasure "Kumagera" printed on it 🍶. Junmai-shu made with the underground water of Mt. Daisetsuzan as the brewing water, and stored in its raw state 😊. The aroma is fresh and grain-like with a mellow umami flavor, and the taste is classic with a slight alkalinity and a crisp finish 😋 We had it with bonito tataki as an entrée 😋.

A seasonal product for the harvest season🍶 from Higashitsuru Sake Brewery, the only brewery in Taku City, Saga Prefecture, which was rebuilt after heavy rain damage in 2019. The aroma is gently fruity like lychee, and when you drink it, it is very fresh with the acidity and good gasiness from the sake brewing process 😄. It has a round and penetrating flavor, perfect for the cooler weather of this season, and I feel that the sake yeast yeast is still good.
