It has a fresh aroma of blue fruits, and when you drink it, it has a full flavor with a delicious rice flavor. It has a dry, modern classic taste with no sweetness and a mellow, crisp finish, which is my favorite 😋.

The distinctive handwritten pink label caught my eye and I couldn't help but select it 😁. The toji personally supervised the bottling of the recommended freshly pressed sake and released it with a limited edition handwritten label! The sake has a refreshing ginjo aroma, a full-bodied juicy flavor, a delicious rice flavor, and a moderate acidity that keeps you coming back for more! The lingering aftertaste is slightly bitter and acidic with a good sense of balance.

Wakayama sake made with Yamadanishiki and rice suitable for sake brewing 🍶. A classic type with a clean, crisp aroma, a round, full and soothing umami taste, and a slight acidity in the second half that flows nicely 😊. Perfect for a light drink, just the right size 😆. It is also good with hot sake!

Among Hiroshima sake, I especially like Kamo Kanehide's seasonal sake 🍶. Gentle 🍇 aroma, soft mouthfeel with a slight sizzle, moderate sweetness and flavorful overtones, shifts from sour to slightly dry after the mid-palate, overall balance typical of autumnal sake with a sense of maturity 😄. Seafood and mushrooms seem to go especially well with it 😋.

Hiyaoroshi to drink in the harvest season 😁. The aroma is mild, but when you drink it, it is dry and dry overall with a firm flavor and deep lingering aftertaste at 17.5 degrees Al! It is said to be one of the top 3 dry types of Tamagawa 🍶. I would like to pair this with autumn ingredients 😋.

Hatsugaarakudai (Utashiro) 🍶 from Tenryohai Sake Brewery, famous for its rapidly growing popularity and story of revival from the crisis of going out of business. When I uncorked it, I was surprised to hear a vigorous pop, but no blowout 😅. The aroma is gorgeous and beautiful, the taste is fruity and naturally sweet, and the acidity is a bit gruff, the finish is surprisingly refreshing and crisp 👌 This would be a great pairing with sweets 😋.

I have always been curious about this Shimane sake, which is thoroughly temperature-controlled and sold in special refrigerators at liquor stores. Fresh and refreshing aroma, firm umami, tight pungency and a little astringency, clear, easy to drink, deep flavor, unique balance 😁.

Chosen at the fall sake corner in Yume Town 🍶. Mild aroma, mellow and gentle mouthfeel, pineapple-like overtone, sweet and umami flavor, and a bitter aftertaste that gradually fades away 😋. It has a pleasant balance with a roundness that is typical of autumn sake 😆.

This is a super dry junmai sake with a sake degree of +15. It is named after the "Sexy Yamamoto Yeast" that was discovered at the Yamamoto Sake Brewery. It has a light aroma, with a subtle fruity apple flavor at first, followed immediately by a sharp spiciness that cuts through clearly 😁. I think it goes especially well with Japanese food ☺️ The third photo is the lunch we had at Tomonoura the other day 🍙.

I chose it because of its autumnal, moon-viewing-like label 😊. This one was not heated as usual, but refrigerated and matured in its raw state. Gentle aroma, sweet and sour like ripe fruit when you drink it, well-balanced collaboration of umami and acidity, and a light bitter pungency on the back end, somewhere between modern and classic 😆. It's the type of sake that makes you drink more and more without even knowing it 😋.

This hiyaoroshi is brewed with koji suitable for daiginjo-shu and matured slowly in the cold storage cellar of the brewery for a whole summer. It has an apple-flavored aroma blended with fruity and acidic flavors, a gentle and smooth mouthfeel, a mellow, ripe taste of rice with a hint of fruitiness, and a dry, refreshing finish 😋. It is a perfect match for the taste of autumn!

I saw a pop-up saying it was a special tasting sake at my favorite liquor store, so I took it home 😊. The aroma is clear and refreshing, the rice flavor and slight bitterness on the palate, and the crisp dryness on the back end goes down your throat nicely, a classic Kochi Royal Road 🍶. This is a classic Kochi classic type 🍶 It's a food sake that goes well with sake snacks without getting tired of drinking it 😋.

It is a collaboration product between Kure-shi, Hiroshima Prefecture's "Kure-shi" and Senpuku, Kure's local sake brewer, and is only available in the prefecture 😊. It has a gorgeous aroma of apple, and when you drink it, it has a classic 🍶 rich taste with a sweet and sour base. Slightly spicy and would go well with seafood 😁.

Hatsufei Tong, which is often seen in the Sakegawa area 😁. Slightly sweet peachy aroma, soft sweetness when you drink it, minerally sake quality, fresh and refreshing acidity, crisp and light aftertaste! The sweet and sour taste is just delicious 😋. Even though it's Yamahai, it's low alcohol and easy to drink, perfect for the hot season😍.

It is a limited edition product sold only at sake stores in Fukuyama City, where Tenpoichi is located🍶. We got it when we went to see the Ashida River Fireworks Festival during the Obon vacation 🎆. Tenpouichi sake tends to be dry, even in Hiroshima where most of the sake is sweet, but it has almost no aroma (maybe because I have a summer cold). It has a natural flavor, so it can be served with both Japanese and Western food 😄.
