Since it was the New Year, we chose a local 🍶 with gold leaf in the shape of cherry petals for good luck 😊. It has an elegant and fragrant aroma, a rich flavor, a fruity and gently penetrating umami that is typical of daiginjos, and a dry aftertaste that goes smoothly down the throat and goes well with the strong flavored osechi 😋.

With a view of the illuminated Kurushima Kaikyo Bridge: ☺️ This junmai daiginjo is made with Ehime Sakurahime yeast Type-4 and brewed using the "mizumoto" method from the Muromachi period (1336-1573). The top aroma is slightly fruity, very soft to drink, with gentle acidity, mild sweetness, and a beautiful sharpness without much alcohydrates 😋. We enjoyed it with Matsuyama chicken 🍶 We hope to enjoy a variety of 🍶 next year! Happy New Year, everyone 😊.

The sake we will enjoy at the end of the year is a standard sake brewed by Bajo Sake Brewery, a small sake brewery in Kumano, Aki-gun, Hiroshima Prefecture. It has a light, slightly acidic aroma and goes down the throat smoothly. The sharp rice flavor and the lingering aftertaste of mild acidity characteristic of the sake's original brewing process balance out the overall flavor and make it suitable as a mid-meal drink 😄.

A Junmai Dry Sake representative of Kochi, named after the "Eight Plans for the Boat" written by Ryoma Sakamoto on board a ship. It has a mellow aroma derived from the rice, with a hint of the delicious rice flavor, and a dry and refreshing finish 😋. It has a punchy but well-balanced taste, especially with fish dishes. ☺️We had it with Yose-nabe tonight 🍲.

It is only available at the brewery and is freshly squeezed directly from the bottle. ☺️ The top aroma is like green apple flavor, and when you drink it, you first feel fresh and slightly bubbly, then rice flavor and sweetness, followed by bitterness and acidity with a light sharpness 😆 This is good 😆 This is good 😋. Good fresh taste with a modern taste that is the opposite of the hard brand name 👍.

Merry Xmas 🎅❗️I chose a light one after recovering from a weekend cold☺️ This sake is brewed with yeast extracted from cherry blossoms. The aroma is a little floral, the mouthfeel is light, a little sweet and sour, and it's designed to be easy to drink with low alcohol content 😆.

Inspired by the four seasons of Kujukuri-hama, this seasonal product represents the four seasons during this cold season🍶. Titling the bottle "Departure" as if the freshly squeezed bottle were a "new start", it is said to be a bottle that marks the beginning of a new year for the OCEAN99 series 😄. Just like the image on the bottle, it has a gorgeous and refreshing aroma, and when you put it in your mouth, you will feel a shwashy sensation that stimulates your tongue, and the sweet, delicious and juicy quality of the sake will quench your thirst 😋. It is a dangerous sake that can be drunk neat and refreshingly on its own (^_^.)

The first Gakki selection was the Bessen Nakatori😊The Nakatori is the middle part of the storage tank and is a limited version that is only available once a year🍶. It has a well-balanced taste of moderate sweetness and acidity, and the aftertaste is surprisingly dry and refreshing. It's also good on its own, but tonight we had it with bibimbap!

I have been curious about this brand since I read the comments of the people at Sake-no-Wawa😄. The name was taken from the two Chinese characters of "Amaterasu" and "Biroku," each of which means "to brew the blessings of heaven. The top aroma is refreshing with a slight grape-like flavor, and when you drink it, you will feel a pleasant gasiness, followed by a slightly sweet but light spiciness, which fades out nicely with a delicious acidity 😊It is easy to drink and very tasty on its own 🍶😋.

This seasonal product is a cross between Hakurakusei, which is synonymous with the ultimate food sake, and Bizen Omachi, which is rich in rice flavor. The first aroma is slightly fruity and sweet, the second half is mellow and acidic, and the third half is smooth and clean, so even though it is a pure sake, it does not feel heavy and has a perfect balance of transparency 😊.

Urasato is a new brand brewed by Chikara Urasato, the 6th generation brewer, using contract-grown Gohyakumangoku (five hundred million stones) in a field near the brewery. It has a gorgeous melon aroma, a slightly gassy mouthfeel, a hint of banana-like sweetness followed by juicy freshness, and finishes with a gleaming bitterness 😆 Overall, it is full of fruity sensations that are intoxicating! Thanks for the treat 😋.

It is a seasonal sake brewed by Iwasaki Shuzo, which produces only about 300 casks per year. They also have other limited edition sake such as Active Summer and Active Sky. ☺️ The combination of a fresh, fizzy, green apple-flavored aroma, umami, acidity, and a mild mouthfeel makes it easy to drink and makes for an easy cup. The flavor is further enhanced by mixing in the ori. It has a dry and refreshing aftertaste, and can be enjoyed on its own or as an in-between-dinner drink!

The origin of the name "Toyo Bijin", a famous sake from Yamaguchi, is said to have been named by the first brewer in memory of his late wife. The aroma is almost imperceptible due to a stuffy nose, but when you drink it, it has a slight pineapple feeling, a mellow umami, a soft sweetness, and an acidity that cuts through nicely 😋. It was well-balanced and very easy to drink 🍶!

It seems to be a limited edition sake🍶 from Kinko's Shuzo, which brews Kamo Kanehide, and is only available at local supermarkets. It has a refreshing ginjo aroma, a greefy acidity and bitterness on the palate, and a gentle, clean sweetness like wasanbon at the base. The sweetness and bitterness gradually fade out in the aftertaste. It is very easy to drink and seems to go well with western food 😊.

The first Mimuro Sake! SAKE COMPETITION 2024 Junmai Sake Category Gold Winner, according to the SAKE COMPETITION 2024 Gold Winner in the Junmai Sake Category. A classic low-alcohol sake brewed in Miwa, the birthplace of sake brewing🍶. The first thing you notice is the fresh ginjo aroma that smells like ramen, and when you taste it, it is so juicy and fresh, it just pops on your tongue 🫧 It is followed by sweetness, umami, and a smooth acidity that cuts through gently 😁. This is a very good wine!

The name "Bon Time," a mix of French and English, was named with the hope that people from many countries will enjoy it, transcending cultural genres. I like Tomikunaga's sake 🍶, which is a white malted rice sake 🍶, but this one is also good😋 with a balance of refreshing citrus acidity and the natural sweetness of the rice. If I did a blind test, I would mistake it for a white wine 😁.

Fuji, and like a crane among a flock of chickens, to excel in the world of sake brewing. The brewery, Ikuma Shuzo, also has a long history, having been founded in the first year of Keio. ☺️ The aroma is subdued, and the mouthfeel is clear, clean, and dry. It has a balanced taste with a slight bitterness in the aftertaste, but it is easy to drink. ☺️

Limited production local sake brewed with Teruhi rice harvested from reclaimed fallow rice fields damaged in the 2014 Hiroshima torrential rain disaster🍶. It is named after the Obayashi district where the rice fields are located, with the aim of "making the village prosperous for the next thousand years." Unfortunately, I saw a newspaper article the other day that the brewing of this season's sake was abandoned due to deer-eating damage this year. We are praying for an early revival. The first impression is a fresh aroma and fruity acidity, followed by umami in the back and a slightly spicy aftertaste, which is refreshing and white wine-like 😀. The low rice polishing (85%) and light mouthfeel made it easy to drink 😋.
