I was in Shima Onsen again, and I was looking for Yuzu Yuzu for aperitifs and it was delicious 🤣. There it was, this, this - sweet and tasty 🤤. It is so easy to drink, it's like a juice.

Purchased on a business trip to Tokyo to try it. Almost a year later, I finally opened the bottle. It is sweet, with a hint of acidity, maybe the work of wine yeast. Finally, the rice flavor tastes like Koshihikari from Tango. Bats for sure. The 22nd year was brewed with Italian rice called Carnaroli, which I wanted to drink.

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. The waka poem written on the box? on the box is also nice. The slight coloring is due to the limited amount of charcoal used in the filtration process.

Toyoake Junmai Ginjo. Domestic rice. Polishing ratio 60%. Sake made by Ishii Shuzo in Satte, Saitama. It has a mild ginkoku (gin aroma), and a flavor with a moderate thickness that spreads softly. It is brewed with a harmonious flavor in mind. It is a sake that does not lie in the introduction on the label. I enjoyed it on an autumn evening, well chilled. It is refreshing on the palate, but as you sip and savor it, the flavors come out more and more. I enjoyed it with rice miso, tsukudani (food boiled in soy sauce with plum and laver), and spicy oysters. It is a delicious sake.

Next up was the Ittiki Senzan Comet Nama-no-Hara Sake. The only sake from Gifu that I know of is Ikki Senzan, so I thought I'd give it a try. It was a brand that had just been opened. It was a brand that had just been opened, so I liked the way the flavor was firmly on the tongue. The sweetness was not too strong and flowed down the throat easily. This is the first hit I've had in a long time. I wanted to drink it slowly, but I had to keep up with the pace of my grandchildren. I was getting too hungry to let them play with their toys, so I quickly settled my bill. The next drink was a Tokujiro for Joyo's distributor? Tokujiro I drank Joyo several times, but this was my first time to drink Tokujiro. I happened to see on a restaurant instagram I follow that Tokujiro was originally a joint product between a Hirakata liquor store and the Joyo Brewery. It's unfiltered, once-bottled, and heated. It's fire-brewed, but it's still slightly effervescent and has a fresh, mellow rice flavor that's really tasty 😋. I'll buy Tokujiro next time I see it.
