Jizake Saotomi Koshihikari Junmai Sake: Mochigo no Akkatsu Nigori Sake.
I picked it up at Takahashiyo Sake Shop because it was one of the last bottles available. 1,650 yen.
I carefully opened the bottle following the instructions on the bottle-opening instructions, carefully letting off the gas several times, but being very careful not to let it bubble up too much.
By the time I finally poured it, it had taken 7 minutes.
The sweetness of the rice, the strong crackling gas, the slight sourness, and the bitterness.
On the second day, the sweetness increased dramatically and the bitterness decreased. It was a very tasty sake.
It is a clear, bright gold color with a strong caramelized aroma derived from the Maillard reaction. It is a sake that I would describe as old-fashioned, in a good sense of the word.
I like the balance of its umakuchi, gorgeous aroma and sweetness, and its restrained acidity and bitterness.
It has a robust flavor, making it suitable as a food sake, but it is better with meat dishes and warm dishes seasoned with fermented seasonings such as miso and soy sauce than with fish.
It may be hard to find outside of the prefecture, and even in Gunma, outside of the Numata area.

It is said to have originated from Fujiwara Kuniyoshi, the "Left Minister of Oze," the second son of Fujiwara Tsunefusa, the Minister of the Left at the time, who was driven out of the capital and exiled to this place (Shirasawa-cho, Numata City, Gunma Prefecture).
It is extremely fragrant. It has a hard acidity, a slight pungency, and a full-bodied flavor. It is a little unsatisfying when it is on the tongue and in the aftertaste, but it is delicious when it is swallowed!
