Sangu Tokubetsu Junmai Sake Aizan
The last sake of the Aiya Festival was Sangu, which had been laid down for a long time. The brewery's toji may have passed away, but the truth is still unknown.
We will be very grateful for the sake.
I'll have it cold.
The color is clear, but the yellow color is quite discernible.
The top aroma has a strong pure alcohol aroma.
It flows smoothly on the palate.
The taste has a slight, weak acidity, and the umami of the rice seeps out slowly. It has a gentle, somewhat Aizan-like quality, and there is almost no bitterness.
It has a mild and rounded flavor.
It's probably not the same as bottled tailored, but I appreciated it and enjoyed it.

I have had Sangu by Sawasa Sake Brewery once. It seems that the business is closed and there seems to be no way to reopen it.
It's a shame that I will never be able to drink my favorite amplevu again!
