Jyuemon" by Toshimaya Shuzo, well-known for Yamori... it's a stone's throw away! Nakadori unfiltered raw sake, fresh and crisp... Hachitan-nishiki has a nice aroma... my favorite fruity flavor... and the mouthfeel... a good bitterness of sweetness and bitterness, followed by the sharpness of Hachitan-nishiki! It does not disappoint! I'm sure many people prefer this to Yamoru... I'm sipping it while grilling oysters... yummy!

Another brand of YAMAMORI Purchased at a supermarket near my house. It is a Hachitan-Nishiki, a specialty of Teshimaya, and the taste is almost the same as Yamori's. The aroma is fruity and melon-like. The base is sweet and delicious, but after drinking it, it may seem drier than Yamori's Hachitan-nishiki. Umai 👍👍 The best match this time was sauteed sea bream with butter. It goes better with something with a strong flavor 😋😋. Yamori is my favorite brand, but I think I even like this one more than Yamori❗❗❗ Next time I buy it, I'd like to open the bottle at the same time as YAMORI and compare them properly 😆😆.

Omachi rice + Hakuto yeast used Junmai sake produced by the TAKEO 20 Project, a collaboration of agriculture, commerce, industry, and university students, using specially cultivated Omachi rice from Tatebe-cho, Kita-ku, Okayama City. The label looks modern! This one is definitely fruity 😆. Fruity sweet and sour Light and easy to drink Hiruzen style yakisoba noodles and umaumaumauma 🐎. I bought a lot of kamaboko at Sakaiminato because they are easy to carry and store 🐟. The crab has a very interesting shape and I can't stop smiling just looking at it 🦀 🦀 🦀 🦀. I found out about it thanks to the Kenmin Show program 😁.

This is my first bottle of "Ishichi" Asahi rice, one of the brands that got me into the sake swamp. It has a nutty, savory, full-bodied flavor with a strong impression of rice sweetness rather than a fruity sweetness 🤤. I knew it! Great cosmetics too 😆.

First brand name Kita no Hana. It is a backroom deal with a sake teacher. Even if I say it is a backroom deal, he will sell me any rare sake at the same price I bought it from the liquor store, and even if I tell him I will take care of the transportation costs, he stubbornly refuses to accept it. I told them that if I sold them at a higher price, the liquor store would take me on as a reseller, and after that, they would never sell me rare sake. The fact that you can normally drink Jyushiyo at home is based on the mutual trust between the seller and the buyer. Kita no Hana, the label is very attractive. I don't detect much of the Kamitatekoso, but there is a round, unfamiliar aroma in the back of the bottle. The mouthfeel is moist, calm, and elegant with sweetness and soft umami, and the rounded aroma in the aftertaste is fruity. The acidity and bitterness are both moderate, and it has a mysterious sharpness that just flutters and closes. It is really a round, gentle and mysterious sake, and this must be one of its balances. It smells simple and sweet, like freshly baked bread. I have never tasted a sake with such an aroma. The mysterious brewing water is soft, slightly viscous, mineral, and translucent. The sweetness is like freshly baked bread, and the robust, tight rice flavor is as vibrant as ever. There is also a hint of acidity, which is probably due to the use of the sake yeast, but at any rate, it is full of umami. Tamura is a gem that is profound yet light, powerful yet gentle, and a contradiction in terms. It disappeared with a slight sharpness in the back of the throat. In recent years, an increasing number of popular sakes are being hailed as wine-like sake with a sweet and sour taste like grapes. Of course, I like these sake as well. But if you ask me which sake made from rice has the weight, lingering aftertaste, complexity, and simplicity of red wine, I would drink Tamura without hesitation. This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? I was wondering what the same company that did Tenka and Shihu would do with the Meimon Shukai now that they've taken over the business? I was wondering what they were going to do with the prestigious sake associations, and then they released it 😊. Slightly effervescent, sweet and sour. Is it white malted rice? It's so acidic that I thought it was white malted rice. It also has a slightly dry atmosphere. It has a unique taste, but it is delicious. I wonder if the product for the Meimon Shukai that was sold before was Yuyamanishiki, but instead of using Yuyamanishiki, they used Gohyakumangoku to separate it from Honami.
