Setoichi *O
Slightly dry, Sake
The Joy of Sake New York 2025
A Junmai Daiginjo that brings out the best of Omachi's character. A multifaceted and deep sake.
Drinking it as is, you get a bread-like yeastiness.
Sourness, but with a bold flavor.
It has a strong umami when served with food.
Good with simmered dishes and nuta

I have wanted to try this sake for a long time.
Setoichi has many variations, so I thought I would start with Sakata-Nishiki, but I found it on my trip and tasted it at the inn.
It was elegant and mild, but had a strong flavor and was quite good.
Next time, I would definitely like to try Sakata Nishiki.
Half-bottle Junmai Ginjo from Kanagawa Seto Shuzo. 100% Omachi. It has a rich, thick, sweet flavor from fresh storage, but surprisingly refreshing on the palate.
