Saw the same Setoichi product as the delicious "Harubaru" at a local supermarket and bought it.
Fruity aroma
It is a sake with a fresh, clean taste, sweetness, umami, sourness, and finally bitterness. It was delicious 😋😋.
Memorandum of drinking in the past February 2024
Selected from Setoichi, a brewery recommended by a liquor store when I was just getting into sake.
Fruity aroma like apple
Fresh, crisp, umami sweetness and sourness, with a slight alcohol taste that left my nose and gave me a clean feeling 😊.
It was delicious 😋😋😋.
Rice polishing ratio 55%, alcohol content 16%, 100% Yamadanishiki
Purchased at a store directly selling sake. The brewery does not make seasonal sake, but it was listed as a current recommendation. I asked them why, and they told me it was because the timing of the seasoning was just right. Well, I had to try it as soon as I bought it. It's so stylish, I can't imagine what it tastes like from the label. It says, "Like the moon floating silently in the night sky, this sake is gentle, full, and elegant. The overall taste is fruity, with a slight acidity and a strong bitterness at the end to support the fullness of the flavor. It seems to be a combination of Yamada-Nishiki and Association No. 10 yeast, which means that the acidity is not sharp, so it is gentle.

I bought a two-part bottle to try.
I couldn't wait until the evening and drank it during the day.
It has a strong spiciness with a hint of sweetness from the rice.
I thought it was slightly sweet, but it was very spicy for a sake with a sake strength of +1!
I should have had a glass with snacks while watching the moon.

I'll be back👍 I'll pick up a bottle for Umeshu (four-pack) and a bottle for Sandesi (as it is).
It's 20 degrees Celsius, so it's quite high in alcohol, so it's a bit of a kick.
It has a dry finish.
Keep the sweetness and umami to a minimum.
It seems to bring out the best of the fruit.
It will come back as a good fruit wine.
