There were many different labels of sake brewed by a revived brewery in Kaisei-cho, but after much deliberation, I settled on this one.

It is indeed fresh, slightly citrusy, and light, but it is not only light but also full of flavor.
The label says that the sake we purchased was produced in July, so it must be a summer sake.
It is a little disappointing to think that it would have been even more refreshing to drink during the hot season, but it is very good when you are looking for a refreshing drink even in this cold season!
It looks light and transparent. In the mouth it has a thick and sweet taste.
The alcohol content is 18%. One sip warms the internal organs. It is like a noble sake.
As the brewer recommends, mix it with soda water 1:1 to make a "wind-blown highball" to lighten the taste and make it easier to drink.
Read the introduction card (or explanation card?) at the store or roadside station. and think about what foods would suit you best.
It may not be suitable for those who prefer dry sake.
(The brewery also says that the sake here is made with soft spring water, which makes the sake aromatic. →) You're wondering about the representative brand Sakata Nishiki, which is supposed to be dry!

So without further ado, let's have it!
First, the aroma. Not much of an aroma.
The first impression on the palate is umami and fruity.
The full-bodied, complex flavor, with a hint of sweetness, is balanced wonderfully and delicious!
The lingering aftertaste is a slight spiciness and minerality that spreads smoothly down the back of the throat.
It was a delicious sake with a beautiful mouthfeel and a smooth taste.
It was a very tiring week, but I had a good time with my wife, enjoyed good food and sake, and had a very good sake rush!

I bought this sake at the same store where I bought Hanamup, which is also located in the corner. I visited Seto Sake Brewery on a tour of Kanagawa sake breweries and bought and drank three kinds of sake, all of which were delicious, but I had never seen it for sale near my house, so I bought it this time. It was also delicious.
