The taste is rich but light on the palate. It is even softer when heated. It has a moderate aromatic richness and a little bit of spiciness. It has a good balance and can be served with a wide range of food. It is a limited edition sake, but it has a standard taste. Mr. Ota lives in Kamakura. I was there just two and a half months ago, so I missed it a lot! Once again, Kamakura is a wonderful place! The restaurants that were introduced to us were all very unique and the food looked delicious!

I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Local brand of Kamogane. It is al-soke and has no label on it, so is it a regular sake? The taste is clearly superior to the ginjo class, with a touch of sweetness and a refreshing feeling. Outside drinking. Ordered by the impact of the name. When poured, it smells moist and sweet. The taste is as expected (?). The sweetness is strong. When tasted, it has the flavor of rice. There is a slight astringency in the aftertaste. The mouthfeel is clean, with a watery sensation and a nice clean finish. There is a distinctive sweet aroma. It is a mellow, sweet sake, and you can sense the careful craftsmanship. Later I looked it up and found the word "Toyobai" 😳. I didn't realize it was so 😚.

This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

The current sake brewery was built in 1927-3, the first reinforced concrete structure in Tohoku. Ginrin Kurukuru A refreshing sourness, but with a hint of umami. First brand name Kita no Hana. It is a backroom deal with a sake teacher. Even if I say it is a backroom deal, he will sell me any rare sake at the same price I bought it from the liquor store, and even if I tell him I will take care of the transportation costs, he stubbornly refuses to accept it. I told them that if I sold them at a higher price, the liquor store would take me on as a reseller, and after that, they would never sell me rare sake. The fact that you can normally drink Jyushiyo at home is based on the mutual trust between the seller and the buyer. Kita no Hana, the label is very attractive. I don't detect much of the Kamitatekoso, but there is a round, unfamiliar aroma in the back of the bottle. The mouthfeel is moist, calm, and elegant with sweetness and soft umami, and the rounded aroma in the aftertaste is fruity. The acidity and bitterness are both moderate, and it has a mysterious sharpness that just flutters and closes. It is really a round, gentle and mysterious sake, and this must be one of its balances.
