Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. I bought this bottle at Sasaya when I visited Tendo City in Yamagata Prefecture in September. I had had it in an inokuchi (cup) at Ponshukan, but had not been able to find a liquor store that sold it, but this time I finally found one. The bottle we brought was the regular distribution version of Junmai Daiginjo, which is a bottle-heated, fire-aged sake. The rice used is 100% Niigata rice. Polishing ratio is 50%. Alcohol content is 15%. Specifications: Bottle warmed and fired once. Sake degree is ±0 to +1 When the bottle is opened, the aroma is gorgeous and fruity, with a banana-like ginjo aroma. The aroma is reminiscent of ripe fruit. When poured into the sake cup, it has a very clear, pale golden color and a smooth, thick texture. The first sip reveals a soft sweetness and fruity aroma, with a rounded sweetness reminiscent of bananas and a rising acidity that tightens the whole, and the umami spreads gradually. The aftertaste has a light bitterness and sharpness, and although the aroma lingers for a long time, it is not too sweet and the finish is clean. It has a light, dry impression. Delicious 🍶Death 😋.

First time drinking at Japanese Sake Festival Osaka ③. This is Okuhida-san, which I really got for the first time 😀. This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.
