I bought this bottle at Sasaya when I visited Tendo City in Yamagata Prefecture in September. I had had it in an inokuchi (cup) at Ponshukan, but had not been able to find a liquor store that sold it, but this time I finally found one.
The bottle we brought was the regular distribution version of Junmai Daiginjo, which is a bottle-heated, fire-aged sake.
The rice used is 100% Niigata rice.
Polishing ratio is 50%.
Alcohol content is 15%.
Specifications: Bottle warmed and fired once.
Sake degree is ±0 to +1
When the bottle is opened, the aroma is gorgeous and fruity, with a banana-like ginjo aroma. The aroma is reminiscent of ripe fruit.
When poured into the sake cup, it has a very clear, pale golden color and a smooth, thick texture.
The first sip reveals a soft sweetness and fruity aroma, with a rounded sweetness reminiscent of bananas and a rising acidity that tightens the whole, and the umami spreads gradually. The aftertaste has a light bitterness and sharpness, and although the aroma lingers for a long time, it is not too sweet and the finish is clean.
It has a light, dry impression. Delicious 🍶Death 😋.
There is a hint of sweet fruit acidity, like malic acid🍎, as well as a gentle white wine🍾 flavor.
The pop-up said it goes well with cheese and meat🥩. I had it with cheese🧀.
The alcohol flavor is subdued and has the type of depth that complements the food.
In that sense, it is easy to use and I recommend it.

I was curious about this because when I searched for Sogape in Sake no Wa, it came up as a brand with a similar flavor 👀 I found it at a supermarket I stopped by on a whim! I was wondering if there is a demand for it because they even had a bottle of Sandesi - a bottle.
The aroma of cork and oak aroma is faintly wafting through the bottle. It had a sweet and sour taste reminiscent of white wine 😚.

Slightly fruity mid-palate, with a sourness sensation in the second half of the bottle. Delicious.
Sake that looks good in a glass
I don't remember what it is, but I once had a sake that was marketed as "wine-like," and I got the impression that it was similar in direction.
I was able to recognize again that wine-like sake = fruity and acidic sake. I was able to recognize it again!
What is 888? I found out that they made 1,200 prototypes and the 888th of them was the ideal flavor, so that's where they got the name.
The taste is so sweet and aromatic that it makes you think it is a white wine. It has a sweetness and aroma that makes you think it is a white wine.
