Sake from the breweries of Chojamori and Koshino-Kanchubai. I had been interested in this sake for a long time, but I bought it because it was on special price and there was a draft. According to the Internet, the rice is Koshitanrei. I've seen the hi-ire version but only at Ito-Yokado 🤔. I heard it was developed in collaboration with Takaoka National College of Technology, and the 888th sake out of 1200 test brews was so good that they decided to commercialize it. Sourness like wine. It has sweetness but it's not like sake. As the description says, I would like to match it with meat and cheese.

Smells of powdered milk, flowers. Slightly effervescent. The junmai I drank before was so good that it was a repeat purchase, and it lived up to my expectations. It is well-balanced and when you notice it, you can drink it all at once with a slurp. It has a floral, not too sweet, pungent, well-balanced flavor, and a satisfying umami and a sourness that is very satisfying. The 4th day. It has lost some of its flavor and can be drunk without hesitation.

Purchased at Vinos Yamazaki in Kyoto after buying Daina at a liquor store in Saiin After this, I went back to the liquor store on the 2nd floor of the Yaichi main building and to Takimoto - Isetan 😊. I really wanted the Vinos limited edition Isoboast, but the date was a year ago, so I avoided it💦. It's also February 24 😅. I thought about how to read "kunika", "kokka", etc... but when I looked it up, it's "kokkou". Reminds me of Cocco for my generation 🤔. Drink at room temperature. It's lightly colored. Purchase from Okuhida Sake Brewery This sake brewery is within walking distance of Hida Kanayama Station. This time, they recommended to purchase by letter. I am a sucker for limited editions, so I bought it. The aroma is moderate and the taste is strong. It is dry with a clean aftertaste. I paired it with fried pork and cheese with tomato ketchup. At Hankyu Department Store I had a chance to drink all kinds of sake. The nigori was also delicious. They also gave us a 1:1 blend of nigori and junmai. It was also delicious. The one that caught my attention was the Junmai sake "P&A (Panda)", Junmai sake "P&A (Panda)". It's black and white, so I guess it's 🐼😁. It is said that lactic acid is not used in the yeast stocking but is substituted with citric acid produced from white and black malted rice and fermented slowly at low temperature. For today's sake, I chose a Junmai Daiginjo from Kuchiman 😀. We compared the tasting sakes, one brought to room temperature for tasting and one kept chilled, and this one for tasting brought to room temperature might taste better than the chilled one 🤣. The chilled one is just too beautiful to swallow without anything stuck to it😅. The room temperature one spread the sweet and delicious flavor and filled my mouth with deliciousness😇

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. I was curious about it, so when I saw it at Hasegawa Sake Shop, I unconsciously reached for it 🤣. After opening the bottle, the aroma is fruity, but you can also enjoy a grain-like aroma like rice 🤩. In the mouth, it has a fresh fruitiness that reminds me of muskmelon with a slight fizziness 🍈 and a smooth mouthfeel. The acidity, which is not showy, leads the taste beautifully! The lingering citrus bitterness and a hint of spiciness finish off the palate. I had an image that Suehiro Sake Brewery made hard-core sake, but they also brew this kind of sake 😍. Delicious!
