This is a comment from an amateur sake lover. This time, I went back to my parents' home and had a rare sake left over, which I tasted and enjoyed with fish from the Seto Inland Sea. It had gold leaf in it, and it was a sake that put me in the mood for New Year's one step ahead of the others. The taste is soft and umami. Drinking it in a wine glass makes it more refreshing, and it is good to be able to drink it while looking at the gold leaves.
I am thankful that I can drink good sake in good health today. Here's to another toast to sake tonight!
Purchased at Saijo Sake Festival
Forgot to take a picture so I took it after opening the bottle💦.
Cold sake
Subdued aroma
Mellow, like a loaf of bread.
More on the sweet side.
Because it is a pure sake, it has a high alcohol content and is quite intoxicating.
Sake highball gives it a savory and gentle flavor.
It is recommended to drink on the rocks or with soda.
Saijo Sake Festival (2)
After Kamo Kanehide, we went to Kamoizumi.
When we headed there, there was a huge crowd at the food and drink booths...
I gave up on drinking it right then and there and bought a limited edition sake for the Saijo Sake Festival!
Next, we went to Fukubito Sake Brewery.
I had never heard of this brand before!
I bought a bottle of limited edition sake here too!
Light but with a slight sweetness that lingers on the tongue like when you drink sugar!
It has a sharpness.
Hi Eiji, ☀️
I see you went to the Saijo Sake Festival. I went to the Saijo Sake Festival myself 😄It was a great day for a festival, although there were a lot of people everywhere. I went to the Saijo Sake Festival myself 😄 It was a great day for a festival.
Hi Hiro!
It was my first time attending and I was so overwhelmed by the amount of people 😂I was surprised that there were quite a few middle and high school students there too😳.
I was also attracted by the limited edition sake so I decided to try the trout sake lol it was sweet enough and delicious 🤩.
☀️
Saijo Sake Festival.
You can choose between a cup and a Masu for the tasting, but since it was a special occasion, I chose Masu 🤗🥺.
It's sake 🍶.
It is lightly sweet. Gentle and soft sweetness like ripe strawberries🍓☺️
Although there is a smell of cedar wood, probably due to the Masu 🧐.
You can get a Masu as a souvenir.
I wonder if it will fit on the shelf 😅

A limited edition sake purchased at the brewery. It has a strong umami taste at the beginning, but the aftertaste is clean. I wonder if the clean aftertaste is a characteristic of Hiroshima sake. Perhaps that is why it goes well with strong dishes. I recommend drinking it on the rocks.

I got this from a friend who went to Saijo for a visit.
I have visited there twice myself, and it is a very nice place with many sake breweries.
The sake I received as a souvenir is junmai-shu, with a rice polishing ratio of 70% and an alcohol content of 15 degrees, which is standard in terms of specifications.
It has a delicious flavor.
I think it is only junmai sake that you can really taste the rice flavor.
I wonder if Fukubito is sold very often in Tokyo.
If I find it, I would definitely like to drink it again.
Peachy aroma
It is silky and smooth, with no habits, and goes straight into the mouth, but you can feel the mellow flavor in the back of the mouth.
As the temperature rises, you can taste the umami of the rice.
After 3 days from the opening of the bottle, the wine seems so fruity, but is it spicy?
Ingredients rice (domestic), rice malt (domestic)
Rice polishing ratio 60
Alcohol content 15
At Nonta's Sake Brewery 1,485 yen/720ml
Slightly grayish and clear, with aromas of cooked rice, honeysuckle, and pear. The attack is rather strong, with a rich sweetness, moderate acidity and a rather long finish.

Purchased at 7-Eleven in Saijo. It is a cheap cup of sake with added sugar from Saijo, the sake capital of Japan, Fukubito. Still, it's clean with no harsh sweetness, which I guess is the ultimate Saijo Sake Brewing School!
