This is a sake from my hometown - Echizen Ono (Ono City, Fukui Prefecture). It used to be sold at roadside stations, but I looked for it again on my return trip, but I didn't seem to see much of it in the city. I wondered if they are limiting the amount of brewing - or if they are just out of stock. This is the one I found in my parents' fridge. Cool and pungent. A cool spiciness, followed by a nice, clean rice flavor. Then, a strong wave of spiciness hits you. The spiciness swells up while accepting freshness, umami, and sweetness. The intense flavor is intoxicating. After all, Genpei is delicious. I found out that Genpei Shuzo went bankrupt last November, and the direct sales shop was closed. The story of the bankruptcy and revival of the brewery was also seen in the morning drama "Ranman," and I look forward to the time when I can experience the taste of Genpei again.

This is the last of the sake I've been bombarded with in my hometown of Fukui over New Year's. This is a sake from Ono City, Fukui Prefecture. At first, the taste is mild. However, the aroma, spiciness, and sweetness soon explode. It explodes with great density and energy! The aftertaste is also chilling! The chocolate-like taste goes down to the background as it is heated, but it is still there. This strength is a bit like isodine. What if I heat it up? The raw explosive power will be suppressed, but the flavor will also be more relaxed. It gives you a wider range of foods to pair it with. Whether you drink it by itself or with snacks, I prefer it warmed.

This is the sake I drank at my parents' house on New Year's Eve. It's been a while since I drank it. It's a sake from the Oku Echizen region of Fukui Prefecture - Ono City. I've already introduced Junmai (once-hi-roasted) and One Cup Junmai here, but I drank this One Cup on New Year's Eve first. Even though it's a local brewery, this is the first time I've had Genpei. (From a note I wrote while exhausted from drinking too much) When I drank it, I was surprised by its chocolate-like aroma and bitter sweetness. It was the first time I felt chocolate in a sake drink. It's a real chocolate drink. This is interesting. The Junmai One Cup I drank after this was also interesting because it had a chocolate flavor. There is nothing urban or fashionable about it, it's just a cup of local sake from the countryside (which I think is the best kind of sake). It's this kind of fun that makes sake so hard to stop drinking.

When it is warmed, it has an acidity from lactic acid bacteria that was not perceptible at room temperature. This sourness is interesting, but I think it would be better to keep the chocolate or vanilla-like aroma. The days pass by twice as fast as when I was a new adult. However, the night is still long. I have to work again tomorrow, but let's take it easy.

The second sake I bought in my hometown of Fukui. This sake is from Ono City, Fukui Prefecture. Dark fruity aroma. And when you taste it, you'll wonder if it's a raw sake! (According to the official website of the brewery, this is a single heating process.) After a strong attack of spiciness and sweetness, a generous amount of sweetness spreads. The tangy texture is also quite enjoyable. It is a strong point that comes with things like anchovies and Gouda cheese. When heated up hot, it has a mild acidity that I just can't get enough of! Oh, maybe this one should be heated! Now all the sake from the Oku-Echizen region of Fukui Prefecture (Ippongi, Ichinotani, Hanagaki, Manazuru, Genpei) have been conquered! I would like to make sure that I keep the sake from my hometown (for me, Fukui Prefecture, where I grew up as a child, and Okinawa and Hyogo Prefectures, where I lived as an adult and was raised by the local people, are places I can call my hometown). Ryukyu Awamori seems to be difficult to conquer all of them, but I would like to try to control the sake of Fukui and Hyogo prefectures by the time I finish my 40s. Not that it means anything in particular.
