Sake received at the Sake World Summit. This sake is brewed with Ginbukiyo sake produced in Shiga Prefecture. The acidity and umami of the sake are well intertwined with each other. It was a delicious sake. It is perfect as an in-between-dinner drink. My wine-loving friend who accompanied me also accepted the taste of this sake made from the sake's "nama-hashiroshi" (sake brewed from the same yeast as the original yeast).

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Paired with sweet ayu fish from Lake Biwa, it was delicious. ❤️ It is indeed a sake from Shiga, a rice-producing region 😇

The sake that Rafa ordered. I exchanged it for the sake I ordered and drank some. The rice is said to be modified Nobukou. Unlike the straight kumi-style sake, it is calm and has a mild sweetness. It is more like a classic sake. The official website says it is about -7, so I think it is more on the sweet side. If you think of it as the standard sake of the brewery, it is quite high. It seems that Rafa has a connection with Satte City, where Toyoake's brewery is located, and I thought such an episode was interesting.

Toyoake in Satte, Saitama Prefecture. When I tasted it last week at Koedo Kurasato in Kawagoe, I felt its obvious individuality and immediately bought a 4-goupe bottle because I wanted to drink it at home. It is a fire-aged junmai sake with a slightly sweet, dark flavor and a modern acidity. It has character. The subtitle and the message on the back label are also good. This is my first New Year's Day back in my hometown Osaka. This year, my parents invited us to their department store Osechi. My sister and her husband brought me a bottle of Okutanba as a celebratory sake. You can feel the sweetness of the rice in the beginning, but it changes to a dry taste in the middle to the end. It is a perfect match for the richly flavored Osechi and fatty yellowtail sashimi. It is said that the sake degree is +5 (dry), but I feel that it is +2~3 (slightly dry?). I guess. The sake my sister and her husband served me at New Year's was so good that I decided to pick up another brand from the same brewery. Okutanba Junmai Ginjo. This is Yamana Shuzo's regular sake. The 5th Sagajo Shoten Presents at the 5th Bishushu Raku Kushan Shokai 😃. We were honored to have the opportunity to visit the Umaue Sake Brewery in Hiroshima ❗It's a rare sake to drink, and we had to have another one 😉. So this one is made with Ginpu! Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.
