I guess you have to use sweet soy sauce.
I'm going to have to go back to Oita for more Ryukyu, though my wallet is going to be cold for a while!
Sparkling wine container and cork stopper with a firm fizzy feel. Sweet, with malic acidity and a slight bitterness, like a cidre. The aroma is subdued and the sense of rice powder in the back reminds me that it was a sake.
It smells sweet. Cherry or peach.
Flavor of apricot and rice in the bottle.
A refreshing mouthfeel.
Nice contrast with the spicy miso sauce.
A good food sake.
