The last one is Fusozuru. It will be served warm. The top-tasting aroma is that of thick rice. The mouthfeel is clear and the umami of rice is directly conveyed. The aftertaste has a slightly matured or aged feel to it, but I think this is what makes the umami so convincing. The finish is soft and fluffy, with a soft acidity and astringency. The image is quite dandy and austere. Fuso is an old Japanese alias, but when I think of Fuso, I think of the Mitsubishi Fuso truck or the battleship Fuso of the Imperial Navy. In the arcade game "1943," which I was addicted to when I was in junior high school, the sinking of the Fuso was the climax of the first half of the game. I like the sound of "Fuso". I went to the supermarket because I wanted a drink for the evening to drink while watching the opening game of the Premier League. I bought a bottle of Kihei's Omachi, a sake made by the Shizuoka brewery, expecting to like it as much as I liked the gorgeous Omachi. It was not what I had imagined, it was more like a classic Shizuoka sake. It is very light and dry.

This year, the rice used for the sake has been replaced by 2038 Honorific Fuji, and the label has been redesigned. When you drink it, there is a distinct sweetness at first, but the bitterness comes later and disappears. It has a sweet taste, but it is dry. Since it is dry with a clean aftertaste, it went well with Hamamatsu dumplings (🥟). I think I like this kind of sake lately. By the way, recently chilled dumplings are easy to cook and delicious. They are surprisingly inexpensive.

At home. Nara Sake without permission, 12th stage ~‼️ Kubo Honke, a long-established sake brewery in Uda City, Nara Prefecture ~ ‼️ Hatsukasumi and this Soriryu are famous brands. The baseball club team that my sons took care of when they were in junior high school was located in Uda, and this is a nostalgic place where we used to go every weekend. We used to pass by the brewery we visited this time, but this is the first time we visited there. It is called "Sake Brewery Street," but it is really a quiet street. And the taste of the sake.... There is not much aroma, and although you can feel the alcohol in your mouth, the dryness is not so high and the sake is easy to drink. I imagined it would be a dry sake for the experts because it is from a long-established sake brewery, but to my surprise, it is moderately drunk and has a refreshing taste. It is not flashy, but it is a good sake. ‼️

Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.

I got a bottle of Senkyu's "Kirifuri" on a business trip to Utsunomiya the other day...fruity aroma, strong acidity and bitterness? It has a fruity aroma, acidity, and a strong bitterness. This is a piece of bread I bought on my way back from a trip to Kirifuri Kogen. I thought it was the perfect name for a souvenir, but I was surprised to find it was made by Senkou 😳. I've been storing it at room temperature for a while now because it's been heat-treated. But I thought it would be better to drink it cold, so I put it in the fridge and drank it. The best thing about this product is that it has the gas and acidity that I like, even if it has been heated.

I ate okonomiyaki, went to an izakaya (Japanese style bar), and at the end, I got the last of a bottle of sake that the owner recommended 😊I got the last of a bottle as a courtesy 😋. It's like a summer sake with a refreshing taste 😚 and a crisp aftertaste 😋. It went well with oysters, small sardines, conger eels and other specialties. ❤️ I'm going to work hard tomorrow and then go back to the liquor store 🥳.

I got this at the Kokusyu Sake Fair. It said that any opened sake was 1,000 yen, so I bought an old turtle that I liked at the fair. I was a bit confused because the bottle was already opened, but the tank was full. I was a bit confused, but I thought maybe they sold it as opened because no one has a license to sell liquor 🤔. Some prefectures were selling it at the booth, but I guess they didn't expect to sell it there. Hachitan Nishiki and Momiji yeast are used. Fruity, apple and pear-like. A little gassy with a smooth mouthfeel. A little spicy at the end. I can't find the same label when I checked... New product? Pineapple-like when the temperature rises. There's a product called Red Turtle with the same specs, and I wonder if it's a renewal of that? Old Turtle seems to be renewing the labels of their other products, too. But I can't find much information about it... I feel it's very sweet when I drink Morinori Natsu-shu after drinking this... I think it tastes better when it is close to room temperature than when it is fresh out of the fridge. When I drank it at a national sake fair, it was a little colder than room temperature. When the gassiness goes away, it becomes more like a fruity dry sake.
