First trip to Hokkaido in a while. Visited Sakuramoto Shoten, which I had seen on Instagram. It was a modern store, and the store was busy with people coming by car as it was the end of the year.
There was a brand I wanted to drink, but I selected a stylish looking local sake from Hokkaido. Sweet aroma of melon and candy. In the mouth, it is fruity, but the sweetness is mild, accented by sourness, and the bitterness finishes the palate.
Hakodate Brewery is the 14th sake brewery in Hokkaido, established in April 2021 for the first time in about 35 years. It is the only sake brewery in Hakodate and southern Hokkaido.

Slightly chilled
The aroma is mild.
The palate is full-bodied with a dry, frizzy taste.
The taste quickly becomes sharp, but a slight dryness remains in the aftertaste.
Sake by itself is rather bland, but when served with fish stewed in motsu (pork belly) or sashimi, it removes the fishy smell and enhances the flavor very much.
