This sake was brewed on a trial basis with "Hokusae," a new sake rice from Hokkaido.
Commercialization is still some way off, but we are looking forward to it.
When I first got into the world of sake, the level of edible rice was low, let alone sake rice, but it has evolved tremendously. ❗️
It is very carefully made and has depth, yet it is crisp and clean.

I was recommended this rare sake at my favorite liquor store, so I made a toast. I thought it would be quite dry, but it was easy to drink and tasted clean and refreshing.
It seems that a 50% polished rice version of this brand will be arriving soon, so I am looking forward to drinking that as well!
I bought this sake as a souvenir from my honeymoon🍶.
It is a local sake from Nanae-cho, a town next to Hakodate.
It's a light and tasty sake with a nice sharp taste.

Hakodate's sake is not easily found in Tokyo. I was going to drink it with all my heart, but.... It is easy to drink 😅.

I was in Sapporo for an event like this, and there are more and more good, mellow sake from Hokkaido. I recommend Goho.

I think it's a great event to pair the best sake from all over the country including Hokkaido with local food ✨.
Hokkaido is said to be a new line of Hakodate breweries.
The aroma is reminiscent of mellow fruit. A little tomato.
When you drink it, it has a fruity aroma, an astringent texture on the tongue, and a sense of rice.
There is a hint of straw-like smokiness.
The palate is round and classic.
A slightly unusual balance.
It should be paired with a classic entrée.

Sake from Hokkaido is hard to come by, and this is the second time I've had a rare chance to taste it.
We enjoyed the sake so much that it was a gift.
