Hakodate Kozo Y.K. was established in February 2021 in Nanae-cho, Kameda-gun.

The sweetness and mild umami of this sake are very refreshing and gentle. The price is a good price for a 20%-5% polished sake. I thought it was clear and easy to drink.
While the number of sake breweries in Japan is decreasing due to closure of business and other reasons, there is bright news in Hokkaido, with new breweries opening or relocating to the area. I guess it is easy to make sake in Hokkaido.
I wondered why Hakodate and Hakodate have different kanji characters.
This sake was brewed on a trial basis with "Hokusae," a new sake rice from Hokkaido.
Commercialization is still some way off, but we are looking forward to it.
When I first got into the world of sake, the level of edible rice was low, let alone sake rice, but it has evolved tremendously. ❗️
It is very carefully made and has depth, yet it is crisp and clean.
It seems to be a good food sake.

I was recommended this rare sake at my favorite liquor store, so I made a toast. I thought it would be quite dry, but it was easy to drink and tasted clean and refreshing.
It seems that a 50% polished rice version of this brand will be arriving soon, so I am looking forward to drinking that as well!
I bought this sake as a souvenir from my honeymoon🍶.
It is a local sake from Nanae-cho, a town next to Hakodate.
It's a light and tasty sake with a nice sharp taste.
It tasted modern but also had a hidden classic feel. 🙆♂️

Sweet aroma, thick attack. Full-bodied, dry taste, with a fruity aftertaste.
Hakodate's sake is not easily found in Tokyo. I was going to drink it with all my heart, but.... It is easy to drink 😅.

I was in Sapporo for an event like this, and there are more and more good, mellow sake from Hokkaido. I recommend Goho.
