This sake was given to us by a visitor to Kobayashi Sake Brewery in Niigata, which is famous for its signature Akita dog. It is slightly sweet and has a subtle rice flavor, and although it was made in December 2010, it does not have an aged feel and is refreshing and easy to drink. It has a slight peach and lactic acid flavor. I think it is one of the most delicious alcoholic sake.

I'm late to the party, but I'll be there❣️. This is a lightly nigorized version of another brand of Nara Kashiba's famous sake "Okura", Kinko❗️. I'm not sure what to make of it. I love the sizzling, crisp, refreshing taste of the active nigori 😆. I like both Okura and Kintsugi because they have their own unique 🥰 I'd like to enjoy it again soon ( ˊ̱˂˂ˋ̱ )

We had a bottle of their top of the line Dakei Junmai Daiginjo at Sakurada Sake Brewery ✨While most of Ishikawa Prefecture is dry, it is very tasty with a delicious sweetness. Sogen and Takeba are the best in Suzu City, but Dakei is just as good.

Purchased 👀 at Sazanami Sake Shop in front of the station during a day trip to Hikone. Beautiful, corner space and friendly staff. It was a nice store 😙. Since I was there, I chose Kazuhiro, a sake I had never had before from Shiga. It was full, slightly sweet, had a delicious rice flavor, and was very drinkable 😋. Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

Myokayama is my first time. I bought it with Yume brew. The impression is that the acidity is strong at first. The rice is sweet and fresh. It has a little bit of cemedine. I would like to drink it with nabe (hot pot) or strong dishes. I did some research on this brewery and found out that it is owned by Oizumi, a pachislot-related company listed on the Tokyo Stock Exchange. It seems that Oizumi has a chain of izakaya (Japanese style pubs) and they serve sake there. It seems to have lost its cemedine taste and become sweeter than when I first opened it.
