Nakashimaya has been a bit popular lately.
Kanenaka is a series of sake breweries that use the traditional sake yeast, and this ultra-harsh sake won a gold medal at a French sake competition.
The sake has a sourness and complexity typical of a nama-shoto sake, and it has a sharpness to it.
The transition from umami to bitterness is pleasant.
Young strawberry, vegetable aroma.
Syrupy sweetness in the mouth.
Later, there is the umami of rice.
The strength of the original 18 degree sake.
Classic.

I may have a lot of chances to drink sake from the westernmost part of Honshu these days.
The waitress who said she liked sweet sake said it was good, so I tried it! It's not as sweet as it sounds! It feels like you are getting drunk.

Classic spicy and delicious
I honestly don't know what it is, but it has a variety of flavors rather than complexity.
It's sharp but mellow.
The aftertaste is bitter-sweet smoky aroma. ❗️
It goes well with smoked food.
It has a refreshing umami flavor and is crisp and clean with the acidity of the sake yeast. It is an easy-to-drink mid-meal sake that is not too sharp for its sake meterage of +15.

Kanenaka" is Nakashimaya's "Nama Hashiroshi" line.
This is the first drink.
It has a strong acidity, which is typical for a sake made from the traditional sake yeast.
As the name "super dry" suggests, it has a firm dryness or gingerness.
I got the impression that it would be more full-bodied if it were heated.
Next time, I would like to try various other things.
