I'm opening them all up because they are overstocked😅. I couldn't buy it last year and have been waiting for a year. The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice. I'd like to try the sake made with Kame-no-o that comes out around spring.

I bought it because a liquor store in my neighborhood started handling Tajima. I was surprised at how fruity it was. It is fresh, moderately sweet, and delicious. It is a more modern sake than I expected. After drinking this after the first time, it feels more like a sake 🤔.

A liquor store in my neighborhood became a special distributor, but I was wondering why they didn't carry this sake. This is the sixth brewery in the Saku Sake Brewery series. Located in a historic town along the old Nakasendo road, this is a place I would like to visit again. The taste is very strong as it is called "mellow" sake. It is 18% alcohol by volume. It has a bitter taste on the tip of the tongue, followed by a sweet sake-like flavor. I heard that there is a way to enjoy it by aging it after buying it. Next time I'll let it mature a bit and try it with mizutaki in winter 😋.

This sake was created by the young successor of the brewery, who wanted to make a light and easy-to-drink sake. He was trained at Akebono Shuzo in Tenmei. Expectations are high 😊. [I like it, ferry 😆 ] I've had a couple of sake from Watarifune so far, and they're usually good 😋, with a nice balance of umami and bitterness from the gentle sweetness. I think Naminoe is a rare brand that you don't see much in Tokyo. I bought it for the first time, and I got the impression that it is moderately sweet and refreshing. The aroma in the background is a fresh melon candy type. It is more suitable for simmered dishes than sashimi👍.
