Tomikushin's Active Nigori to be drunk again this year I drink a lot of nigori sake this time of year, but for some reason, local nigori sake makes me unusually excited. Mixing and drinking while removing the air. When pouring it into a glass, the occasional solid particles fall out, which makes me even more excited! Fresh, creamy, yogurt, sloppy And yet it's easy to drink with a refreshing aftertaste. I think it's less sweet and more refreshing this year. All I have tonight is persimmon peas and sea chicken, but that's good enough for me. The only drawback is that we only have one bottle, but we'll enjoy it in smaller portions.

The name "Morohaku" is a seasonal Moromi plenty of "Tomikushin" available only in the northern region of Ibaraki Prefecture. It has a crisp, active nigori origin and a dry sweetness that leaves a refreshing aftertaste. We were lucky to be able to purchase it outside of the northern Ibaraki area🍀.

Although it's next door, I haven't had Osaka's sake yet. I was thinking of Akishika or Katanozakura for Osaka, but I found this one at AEON today while shopping. There is no outstanding sweetness or spiciness, but a well-balanced taste. It's a good sake for eating. When I paired it with yuba and fried eggplant with sesame oil, I felt like I could drink as much as I wanted 😋. Good sake in the neighborhood too👍.

There is no description on the 300ml bottle, but according to the official website, it seems to be called Shiboritate Nama-nihan-shu. It has a good balance of sweet and spicy and is easy to drink. It is truly exquisite. I think it is similar to the Shiroshika Classics Limited Nama-Nihan-shu. It's definitely better than the first unfiltered draft I opened.

I think it's rare to find unfiltered raw ginjo 🤔. Slightly sweet and nutty. It has a strong sweetness and umami. It's a good combination of modern and classic without feeling like it's been alkaloosoaked. If the label is a little more modern, it will sell well. After 10 days, it became bitter and hard to drink.

First impressions are a sharp taste with a dry finish. There is sweet apple flavor with a hint of wood / taru. Good combination with foods that are on the salty side. This is a limited Sake.
I felt a sense of maturity or deep flavor. Takashima is in the northern part of Shiga Prefecture, a land known for funazushi (fermented crucian carp sushi). Akebono Shuzo's Akebono Seishun, well known for Tenmei. I drink Tenmei from time to time, but this label is new to me, so I opened the bottle 🎉. The aroma is gentle and subdued. It has a slight viscosity and seems to be quite sweet, but the bitterness soon develops. It then fades away leaving a complex umami taste. At 17 degrees alkalinity, the flavor is thick and robust from the first sip 👊. This Daiginjo is made from Yamada-Nishiki polished to 40%. We enjoyed this clear yet rich umami sake 😋.

It is fresh and tasty with a good amount of sweetness for its sake strength, but the slight bitterness tightens it up. It goes well with meals and is also delicious on its own. This is one of the bottles I harvested in Chitose on the way to work. This one might be the main one! It went well with sagari with sundiner sauce, squid ring salad, and stew.

The sake I chose was Shimantugawa sake, which I have not had for a long time. It has a gentle The sweetness and crisp, clean taste It is the best match for sashimi. It is not flashy but it is an excellent sake that goes well with meals. It is an excellent sake.

The third group of the Sake Rice and Yeast Association is Gintome and Yuko's Idea from Iwate Prefecture. Iwate is often named after the pure-heartedness of the Tohoku region or after Kenji Miyazawa, and the rice is Gintome, which is a Gin user. Yuko, the yeast, seems to be named after the developer, Ms. Yuko Yamashita of the Iwate Prefectural Industrial Technology Center. It is a clear, dry sake. Sake from Iwate is interesting in many ways. A quick trip to Kyoto, at Honmaguro Ginjo Kuroudo Re-ordered a 3-sake drinking comparison, this time with only sake that was new to me. Takanoi GANKI GINJOKURAUDO We started with "Takanoi" first. Takanoi Special Junmai A clean aroma, a refreshing taste, mild sharpness, and a lingering aftertaste. Mild flavor, similar to "Yukio" 🤔.
