The first ooki tree When I hear the word "Yamahai," I have an image of strong acidity. This one, as usual, was characterized by its sharp acidity. The top-tasting aroma has a sense of sake behind the acidity. The mouthfeel is rather light, probably due to the crisp acidity. The flavor is not as strong as it should be. The aftertaste is full of sake-like aftertaste, followed by sourness and a strong bitterness. A closer look reveals that it is 18 degrees Celsius. No wonder it hits the back of the throat so hard. ☀️ Masamune hunters go today🍶. I found an undrinkable Masamune at "TABI BAR & CAFE SUZUVEL" 😆. It is a Masamune brewed by Obata Shuzo, famous for Manotsuru. It has a mineral aroma 😳. Clean herbal mouthfeel 🌿. The aroma is so rich that the sensation of sake fades 🫥. Rice flavor🌾 masks the sweetness and acidity, and the ginjo aroma stimulates the nose. It leaves a slight bitterness and astringency in the aftertaste🙄. It was a new drinking experience with a unique flavor 🤗. How cool to "speak without speaking" 🤩. I thought I should come up with a catchphrase like "Nice Masamune without talking about it" ❓🤣. Nice Masamune👍

Hanashoku Junmai Daiginjo Betsuatsurae The aroma is like grapes with a hint of sourness, the mouthfeel is clean and sweet with a pleasant aftertaste, and there is a lingering bitterness in the back of the throat. I bought some salted sea urchin, which is a perfect match for sake, but is usually hard to find. The taste was so agonizing that it made me want to drink more sake. This month we had a lot of drinking outside, so it's been a while since I've had a drink at home! I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! Although it is a summer sake, it is a perfect bottle for long nights in autumn. I felt it has the potential to be as good as many dishes in the autumn season of taste.

Report 1📝 off-line meeting in Sakai, September 2024 We (Mr. pyonpyon, Mr. bouken, Mr. and Mrs. Yasube, Mr. Ofuji, and myself) were invited to the Sakai branch (Mr. Umaumai, Mr. and Mrs. Wakata, and Mr. Maru), with whom we have strong connections in Kansai branch, and we each brought our own drinks and had very valuable drinks at a certain izakaya 🍶. I was told ⁉️ that I didn't expect such a gathering in Sakai, but I'll go anywhere in Kansai if my schedule allows 🚈💨. We toasted with a sparkling toast from Uma Uma Uma's 🥂. It was my first time to try nigori sparkling, but after the first sizzle, I thought the rice flavor was firm, then I felt sweet and sour like apricot and pulled away. It was more low-alcohol and refreshing than it looked, and I drank it in gulps as I arrived in a sweat 🍾.

Sake from a sake brewery in the northern part of the prefecture, located in the famous production area of Hachitan-Nishiki, Hiroshima's representative sake rice. The brewery has been working on it since the rice was first produced. The name of the sake is "Miwa Sakura" instead of "Miwa Zakura," which I had been misreading for a long time. It is said to be dry, but the quality of the sake is relatively soft. It has a nice sharp aftertaste and is easy to drink. It is quite my favorite 😋. I had it cold, but I think it can also be served warm.

I paired it with stewed daikon radish and shellfish sashimi as the cold weather deepened. It was moderately dry and went well with sashimi.

Sake that I bought as my souvenir when I visited Minamisanriku Town. It has a dry dry taste with (in my opinion) a good amount of miscellaneous flavors typical of junmai sake. You don't feel it as you keep drinking. I participated in a storytelling session about the tsunami damage in Minamisanriku Town. I couldn't believe that a 22-meter tsunami had hit a four-story building along the coast. Even though I actually visited the place, I could not help but feel it when I saw the now calm sea. Hearing about that time always brings tears to my eyes. Perhaps it is because I am from Tohoku. To what extent does "reconstruction" mean?
