Today we are in Itami City! We had a paid tasting at the Old Pine Sake Brewery. I asked for two glasses and was surprised at the amount of sake. The paper cup was filled to the brim. It was amazing! 150 ml per cup. It was clearly written at the entrance... I decided to drink it slowly (sweat). It has a strong umami flavor. This is what sake is supposed to be like. It also has a nice lingering aftertaste. We enjoyed it with a cool breeze!

Whale wave is next. I thought it was your first time in Gifu Prefecture and you got one 😊. The aroma is fresh and fruity by nature, with a slight hint of hineyness, perhaps because the bottle was opened 3 months later. Well-balanced fruity. Almost no acidity. A full-bodied flavor softly appears at the end of the bottle. Although it is a draft sake, it is quite soft and mild. Maybe soft water? 🤔 It is best served cold or chilled. Harima is a sake brewed in Akashi and Uozumi. It has a cool taste with a good umami flavor. It is classically well-balanced. It was a truly delicious sake that went down smoothly with the sake cup.

100% Yamadanishiki from Hyogo Prefecture, with wine yeast. It is said that the name "Sora no Tsuru" comes from a dream of riding a beautiful "crane" soaring in the sky. Wine yeast is great because it makes rice sweet and sour! The top aroma is of grappa and rum raisins. When swirled, it smells of plum. The flavor is very sweet and sour, like plum wine. The color is a pale yellowish hue like lemon pulp, the legs are short and weak.

It is a sake from Akashi City, Hyogo Prefecture. It is only available directly in the city, and there are only a limited number of stores where you can drink it. I found it at a store selling Hyogo products in Kobe Hankyu in Sannomiya and bought it. How does it taste? It does not have the harshness of the original sake. It has a chocolate-like aroma. It has a rich sweetness, with spiciness and astringency chasing after it. The chocolatey and caramel-like aroma that passes through the nose is delightful. If you let it air a little, it becomes more brightly sweet and fragrant. It is simple, but quite flamboyant. How about if you heat it up? It tastes like chestnuts and is easy to drink! The spiciness that comes out volatilely and the refreshing sweetness that comes in quickly. It has a rich and expressive taste. It is really good. The aftertaste is also refreshing and sharp with a nice sweetness. I think it is especially good when heated. I have now completed a round of the 70-odd breweries in Hyogo Prefecture (and have 300 reports to my name)! It took me two years to complete this feat. It was a long but enjoyable journey. I will continue to enjoy Hyogo sake (and Fukui sake as well) slowly and carefully, and hope to one day become an evangelist for good Hyogo sake...

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish. Junmai Ginjo-shu Sakurahime A junmai ginjo-shu brewed with Sakurahime yeast. It has a clear, sweet and umami taste with a clean and refreshing aftertaste. When I told him that Sakurahime yeast is not cherry blossom, he said yes, it is a flower called delphinium. Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka - A Spectacle of Sake and Food from Shikoku - (5) Ehime Prefecture from here Sake brewery severely damaged by torrential rain in western Japan. We drank Kaze no Sato Junmai-shu Matsuyama Mitsui Polishing ratio 60%, EK-1 yeast, Sake meter value +7 I thought it would be a classic type of sake, but it's quite modern. Rice flavor and a bit of fruitiness. The taste itself is nice, but there is something strange about it... Kaze no Sato Junmai Ginjo Shizuku Ehime, Polishing ratio 50%, EK-3 yeast, Sake meter value +6 A juicy sake with a firm sweetness. A little pineapple 🍍. The most delicious 😋. Junmai Daiginjo Usu Yamadanishiki, Polishing ratio 40%, EK-1 yeast, Sake meter value +8 It was refreshing and gorgeous, but delicious! It had a berry-like flavor. All of the breweries here have high sake strength, but it didn't feel too spicy. ☀️ This is the first brand of sake from Ehime. There are glimpses of rice floating around 🌾. The ori is sturdy and doesn't seem to dissolve fully🤔. There is no sweetness and the rice flavor is more pronounced 🌾🌾🌾🌾🌾🌾. In addition to the nigori, the rice is dissolved to the point of being sludgy, but thanks to the microcarbonation, it passes down the throat better🫧🫧🫧🫧🫧. I took the opportunity to order a gibier that I don't usually eat called "ginger roasted wild boar🐗" and got the most delicious meat🥩 with a mix of the sweetness of the ginger, the flavor of the rice and the bitter after taste😋.

Saga, Saga Prefecture, Japan. Saga Brewery Co. Umenomado Special Junmai 3㌥ I tasted and bought this at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. I actually had it yesterday, but since it is a special junmai, I compared the two. We will drink it cold. The color is clear and almost colorless. The top aroma is mild and not very noticeable. The taste has a robust rice flavor, sweetness, and a nutty, chocolate-like complexity. It is rich and mellow, but compared to Saka, it has a more traditional country-style flavor. The aroma on the nose is bitter and chocolatey. By the second day, the chocolaty flavor has settled down, and a clear, mineral, full flavor emerges, making it easier to drink. Saga, Saga Prefecture, Japan. Saga Brewery Co. Saka Tokubetsu Junmai Nama Nama Zake. Purchased after tasting at the Sake Expo held at the Kintetsu Main Store in Abeno Harukas. Saka is a new brand, and is apparently better known as "Ume" (window plum). It is served cold. The color is clear with a slight yellowish tinge. The top aroma is mild, with a slight hint of alcohol. The mouthfeel is smooth with a slight flocculation, and it does not feel fresh to the extent that it should. On the palate, there is a little bit of juicy acidity, a little bit of tangy alcohol, and a nutty, full flavor that spreads. The aftertaste is a bit of a sharp spiciness, with a slight throat hit after swallowing. I bought it thinking it would be sweeter and more umami, but it was surprisingly dryer than I expected. Another bottle I bought at Hasegawa-san in Tokyo station. The first time for Otokoyama-san in Yamagata This is also the original label of Hasegawa-san. The rice used is Miyamanishiki, so it's the same as "Junmai-shu Gold Label". Anyway, it was a delicious sake with a lot of fullness.
