Tomiikiku's local sake ministry️ popular at Haneya. This sake is available in supermarkets😊. The traditional method of production is the same as that of Haneya. Different tastes with different vectors 😋. This sake is characterized by sweetness and umami, not dryness. The common feature is a powdery taste like Kamishinko. I bought it at Sumiyoshi Sake Brewery in Hakata Station as a souvenir from my business trip to Kyushu. They were having a corner bar, but I didn't have time before my flight, so I gave up. I came back with a bottle of Yuni ton by Shichiyou Sake Brewery, which I had been curious about. It is a low alcohol (13 degrees), slightly effervescent, with a grapefruit-like acidity and a clean aftertaste, so you can drink it as much as you want 😋. Delicious! I recommend it to all sake drinkers.

The sake is brewed with four varieties of rice produced by four farmers in the Nishigama district, located in the far west of Niigata Prefecture. So that's what the grains of rice on the label mean. Aichi Prefecture. Handa City. Morita Kinshachi Sake Brewery Co. Kinshachi Yumeginko Junmai Ginjo-shu Lately, I have been encountering Kinshachi at the sake shops I visit for the first time. I found it at a slightly deserted liquor store near my house. I had it cold. The color is a pale green with a hint of gold. The nose has a fruity aroma with a hint of ripe sweetness in the midst of a firm alcoholic aroma. The nose has a fresh citrus aroma for a moment, then an alcohole aroma that passes through to the nose. The attack is slightly astringent with a touch of acidity, and towards the mid-palate, the withering graininess, nuttiness, richness, and umami can be felt as the temperature rises. The aftertaste is a little crisp, and the sake has a classical quality, as if nothing has happened. Sake from the Handa region often has a strong, full-bodied flavor. I think it is because they do not lose to dishes with strong flavors such as tamari soy sauce and miso. Yumeginko is Aichi Prefecture's rice suitable for sake brewing, and is suitable for ginjo because its heart white is smaller than that of Yoshimizu. I've been wanting to try some nigori sake lately 😆. I saw it in the store yesterday, went to buy it today, and was supposed to open it tomorrow... but I couldn't wait, so I opened it today and drank it 😅! There are many nigorizakes out there, but this one is Junmai! It has a nice crackle and a nice "umami and gentle sweetness" of the rice 😻🎉. Originally I was thinking of the 3x Domu from the same brewery, but I was so taken with the Junmai that I decided to go with this one. I'm not sure if I'd be able to do that, but I'm sure I'd be able to do it.

Sake filled only with Domuro-roasted rice. Slightly effervescent. It has a rich sweetness, but the alcohol taste is a little strong at the end.... I was called to work in Tokyo. I don't like cities. The National Diet building is beautiful with gingko trees in full color. I was surprised that it didn't smell like ginkgo. It is as expected.
