Fukuoka! So this is the Kyushu Brewery Shiraito Shuzo. It is different from the Tanaka Rokugo we just drank! Yeast is amazing. My subordinate, who came late, brought in some food. This is a must have for a night out in Fukuoka. Without it, I might not have been able to go home the next day.

Slightly melon-like finish The same subdued, fruity aroma as the first sip, with a hint of vanilla and a hint of azuki beans, soft sweetness and umami of rice spreading with a refreshing acidity, and finishing gently with a hint of bitterness and a slight spiciness from the alcohol. Elegant and well-balanced, it is easy to pair with meals, and is also delicious on its own. My friend's nickname is Tama-chan and his wife's maiden name is Izumi, so he chose this sake as a pun. My parents-in-law gave me this sake as a souvenir from Tanba Sasayama. It's a completely unknown brand, so I was very nervous when I opened the bottle. Maybe it's because we've been drinking a lot of autumn sake lately, but it's surprisingly refreshing 😳 You can drink it easily without getting stuck. It has a faint sourness and a spiciness that comes afterwards, and then it goes away quickly. It's a sake made with clean water that goes well with all kinds of food. We enjoyed it with pork kimchi and horse mackerel sashimi. I want to drink it carefully, but it will probably be gone in two days☺️.

I decided to go with Chiyoda Kura because I thought I could buy Yukihikoyama at a liquor store in my neighborhood. The taste is moderately sweet and tasty with a summery, crisp, spicy flavor. The impression is that it is quite sharp and clean.

KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

This is the second time this spring I purchased arabashiri nama-zake ICHIMATSU. The last time, the condition of the second day was not so good due to a malfunction of the stopper, so I purchased it again. This sake is limited to two liquor stores, one in Sakai and the other in Kishiwada. OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing.
