This is the first time I've bought bamboo island since the new system was put in place. According to the official website of the Japan Famous Sake Association, the rice is Nihonbare and Yamadanishiki. The lees are submerged and when mixed, it is slightly effervescent and petite. Slightly sweet and bitter. I wonder if it is better to drink it while it has gas? Once the gas is gone, the bitterness will make it hard to drink 🤔. I wonder if it would be sweeter to drink the alcohol by itself?

Tochigi Prefecture will receive "Kubi" from Amataka Shuzo 🤗. It's a raw sake with a surprisingly low alcohol content of 9% ❗️ I'm curious to know what it tastes like😆. Now then... The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

At home. Kumamoto sake, Sung Kaoru, purchased on an expedition to Fukuoka. The Sansho I was looking for was sold out, and I managed to find this Kumamoto sake. After a long time, I took a walk around Motomachi area in Kobe by bicycle, bought some gyoza (Chinese dumplings), and went home.
