I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

Late night at the diner. The second one is a limited edition sake that is sold only on two days before the brewery opens. This year's bottle is called "Gokuragiri Limited Edition" on the label. This one has a sweet taste of rice. It's different from the earlier Sukkiri, but it's thicker. It's not my favorite, but it's the kind of sake I want to drink a little bit of every day. After enjoying Fushimi's soft water hot springs in Kyoto, I spent the last part of my trip in Osaka👍. Since it was a special occasion, we had a drink at Kurehaaru, which we hadn't had in a year, and some oden and kushikatsu! The aroma is almost imperceptible. It has a refreshing taste on the palate, but the robust flavor of the rice comes on later. Still, it is lighter than other Osaka sake and has a moderate sweet and spicy taste. We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.

Purchased with Tenryo sake cup at Okuhiroya in Kayashima. They stocked it because it was well received at a Saga sake tasting event held for sake retailers. Probably not normally available in the Kansai region. The rice is made from Hokkaido's Kitashizuku. I know Nabeshima also uses Kitashizuku. It has a beautiful sake quality for the rice polishing ratio. There is a slight sweetness, but it is also slightly thin and heavy. It also has a nutty taste. It tastes like nothing else.
