This is a sake brewery that was created in the wake of the 2013 heavy rain disaster in Shimane, Yamaguchi, by building a solar-powered sake brewery that can be passed on to the next generation with support from all over Japan 🍶.

It is indeed a Junmai Daiginjo made by Mr. Sumikawa 🥹.
By the way, I am also surprised that Tsubu-chan and her husband have various 🍶😳.

Next up was Mochi bo: from the Sonoike Sake Brewery, brewed in Mashiko-yaki, a region famous for its pottery. The brewery also has Tsanbana.
The sake that got me hooked on Japanese sake was Mochi bo:, a pure rice active nigori sake. I was impressed by the fruity, sweet and delicious chili...and this is a dry junmai.
The mild aroma, mellow umami, and light acidity were impressive...or was it?
The sake and the meat and mushrooms in the hot pot spread layers and layers of deliciousness 😋.
Kotori-san, I'm very sorry for the trouble I've caused you 😊.

Here is another Tochigi sake I wanted to try
Asahi Koh" was brewed in the eastern part of Tochigi where the sun rises.
I tended to avoid "dry" or "very dry" just by looking at the label 😅... but..,
It doesn't have a strong aroma, no bitterness, and the rice flavor is very impressive.
The umami and acidity were impressive, and the aftertaste was refreshing.
The mixed salad with diced tuna and octopus was served with a creamy sesame sauce👍.

We enjoyed it while discussing the taste: the calm ginjo aroma, minerality, and rice flavor were well expressed, and the refreshing sharpness was like this....
