Next up was Mochi bo: from the Sonoike Sake Brewery, brewed in Mashiko-yaki, a region famous for its pottery. The brewery also has Tsanbana.
The sake that got me hooked on Japanese sake was Mochi bo:, a pure rice active nigori sake. I was impressed by the fruity, sweet and delicious chili...and this is a dry junmai.
The mild aroma, mellow umami, and light acidity were impressive...or was it?
The sake and the meat and mushrooms in the hot pot spread layers and layers of deliciousness 😋.

Here is another Tochigi sake I wanted to try
Asahi Koh" was brewed in the eastern part of Tochigi where the sun rises.
I tended to avoid "dry" or "very dry" just by looking at the label 😅... but..,
It doesn't have a strong aroma, no bitterness, and the rice flavor is very impressive.
The umami and acidity were impressive, and the aftertaste was refreshing.
The mixed salad with diced tuna and octopus was served with a creamy sesame sauce👍.

I saw the label "Super dry Junmai Daiginjo..." and I was afraid 🫣.
The aroma is mild and dry, but the umami is also very tasty and seems to be good as a mid-meal drink. The flavor combined with ingredients such as pickled mackerel (heshiko), puffer fish roe, and bonito went well with the sake. 👍🏻

Junmai Daiginjo blended sake. It is said to be unfiltered and aged at low temperature for 6 months to unify the flavors and give it an exquisite taste.... How can it not be delicious?

Tsubu-chan sent sake 🤩 for reconstruction support
Back in May 11, 2022, a fire destroyed a sake brewery that was registered as a tangible cultural property of Japan. After the fire was extinguished, the precious sake remained in the refrigerator....
The paper label is very wrinkled.
I wonder how it survived...
Tsubu-chan heard the news at the time and went there within a few days 🚗 You can see how hard it was from the past logs 🥹.
It's so sweet and thick and delicious 🥰...
