We were informed that Hosui was the instant successor to a certain sake brewer in the southern part of Osaka at the age of just 27, following the sudden death of the previous brewer, so we went to cheer him on.
Junmai ◉ Junmai Nama-narashu Omachi
The most impressive thing about this sake was its strong acidity. It was quite tart, but then refreshing.
It is not like Omachi, but it has umami.
According to bouken, other Hosui brands are in the same vein.
Arriving 5 minutes before the doors opened, I found a long line of people waiting in front of the escalator, and even longer when I arrived at the Sky Hall.
The doors opened at 10:55 am and started at 11:00 am, which was a crazy opening schedule, and as expected, we were able to enter at 11:10 am, losing 10 minutes.
I hope the organizers will improve next time.

I've had Hosui a few times, but I wanted to talk to the brewery owner in his 20s, so I visited!
I found out on Tomegawa Sake Brewery's Instagram that he took over the brewery at the age of 27 due to the sudden death of his predecessor, the crazy Salad Kan!
They had a bottle of raw Omachi sake, so I chose this one!
I think there was some sweetness, but the acidity was impressive anyway. It was tasty, but not Oumachi-like...
Yoshimizu, the sake I've had in the past may be dry in terms of specs, but I think it's the type of dryness that suits me 🤔.

I bought this sake because it was a rare sake from Tokushima. On the first day, the freshness and lushness were in full swing, and on the second day, it became mellower. It has a clean aftertaste and goes well with meals.
Today is Yoshimizu.
The label reflecting the Kazura Bridge in Iya, Miyoshi City, Tokushima, is a cup of sake from Yoshimizu.
A sip or two of this dry sake, served cold, combined with the label, makes you feel as if you are enjoying a refreshing forest bath. It is quite delicious.
The rest of the sake was served hot to enjoy more of the sake character. It's not too fizzy, but clean and elegant ✨.

I was told by a shopkeeper that Tokushima ranks last in the nation in sake shipments.
I thought it was a shame for such an easy-drinking sake.
