A great restaurant. Namokka-san knew the restaurant well, so the omakase dishes at the offline meeting were terrific. The single dish for a one-person drink was also excellent. I got to know the owner well so that I can go there alone in the future. しんしんSYI was looking in the cold storage to see which Kyushu sake I should drink when the owner came over and we had a sake discussion 🍶.
After much deliberation, I chose this sake from Kumamoto Prefecture, which I had never had before!

This is a product only available at the special distributors.
Although dry, this junmai ginjo sake has a smooth mouthfeel with rice-like rice flavor and a hint of sweetness, as well as a gorgeous ginjo aroma.
This sake is brewed with sake rice grown by natural farming on a healthy plateau where jumbo tanishis are used for weeding and no pesticides or chemical fertilizers are used. 
しんしんSYThis restaurant has a wide selection of excellent sake, so it is hard to choose the right one, but there are also many dishes that I have never tried before, so it is hard to choose the right one, too!
After the appetizer, we ordered the sesame kanpachi!
The sesame mackerel was not available in season, so I asked for it because it was listed on the recommended menu, and it was excellent!
It is cut into small pieces, so you can eat a little at a time and match it with sake (🍶)!
The sake was not +14 but Mitsui no Kotobuki!
Sake rice is Sake Mirai!

Sake rice "Sake Mirai" is a rare sake rice produced by crossing Yamashu No. 4 and Miyamanishiki over a long period of time by the Takagi Brewery of Jyushiyo. Director Inoue received the rice and put his whole heart and soul into brewing this sake.
In brewing with this rice for the first time, he studied the characteristics of this rice, and in order to bring out the full flavor of "Sake Mirai" and make it shine, he set the sake alcohol level to minus.
The soft ginjo aroma and the smooth use of acidity make this a sake that you will never get tired of drinking.

It's a low-alcohol, shwashy, champagne type of sake, so it's perfect for a toast!
It was less acidic than the other Shinsei, but there were beautiful bubbles in the glass.
It was more subdued than I expected, but it was delicious with a very elegant sweetness 😋😋.

It was gone before I could taste it properly 🤣.
