My criteria for buying sake is often to buy sake that I haven't had for a while or have never had before, but this sake (raw ver.) is my favorite to the point that I buy it repeatedly.
Lactic acid bacteria type aroma. It has a refreshing taste, and the acidity and umami of the rice are exquisite. Delicious!
Sake from Yano Sake Brewery, which brews Hizen Kurashin and Take no En. It seems to be a first project.

I am ashamed to say that I did not know that Shimane Prefecture is the birthplace of sake.
