I was looking in the cold storage to see which Kyushu sake I should drink when the owner came over and we had a sake discussion 🍶.
After much deliberation, I chose this sake from Kumamoto Prefecture, which I had never had before!

It is a little dry but goes well with rock oysters!
The oysters are big, so they cut them into bite-sized pieces and served!
The taste is doubled with a little bit of grated ponzu (Japanese sauce made from grated radish)!

Although dry, this junmai ginjo sake has a smooth mouthfeel with rice-like rice flavor and a hint of sweetness, as well as a gorgeous ginjo aroma.
This sake is brewed with sake rice grown by natural farming on a healthy plateau where jumbo tanishis are used for weeding and no pesticides or chemical fertilizers are used.
