Happy Halloween. Last year, I opened the Halloween label of Takachiyo. This year, I chose this one... like a western event. I chose this one. This is the 5th bottle of Shinsei. It's a white wine, as many people have said. The sweetness and sourness stand out, but the finish is not so bad. Combined with the low alcohol content, it goes on and on. Be careful not to drink too much. It was a great pairing with the cheese assortment.

It is a serious brand that uses local sake rice and brewing water, and competes only with 65% polished Junmai-shu. It is delicious. It is a light and dry sake, but it is more modern than classical, and as you drink it, the flavor becomes more pronounced. It is said that the reason why you can taste a hint of saltiness is because the brewery, the rice fields where the sake rice is grown, and the place where the brewing water is collected are close to the sea. We paired it with fried oysters and boiled squid, but it will go well with anything seafood related.

This is Kaze no Mori that I want to drink periodically. This time it's a low alcohol ALPHA TYPE1. Actually, I drank TYPE1 for the first time, but the quality was more than I expected. The minerality and carbonation that only hard water can provide is still there, and even though it is a low alcohol beer, it still has a strong sweetness to it. The aroma is that of pears, which are in season right now. It's easy on the liver and easy on the wallet. But it is delicious. The battle against self-control continues so as not to get carried away and empty the No. 4 bottle.

This is Toyo Bijin brewed by Mr. Sumikawa, who has a good reputation for sake brewing as the first apprentice of Mr. Takaki Jyudai. It is thick, sweet and juicy. The freshness of the sake and the softness that only a nama-shu can provide will leave you with a happy aftertaste for a while. I would like to enjoy it slowly on its own, but it would also be interesting to pair it with sweets.

This is a different brand from the Denshu brewery. This is the first time I have had it, but I bought it with the confidence that it must be delicious. It is an aluzoe ginjo sake, but it is perfect. It is clean and refreshing to drink. You can feel the sweetness and the umami, and it is a deeply flavorful bottle that finishes with a crisp bitterness. Alcoholic sake tends to have a negative image, but I don't think this is true for breweries with strong capabilities. Jyushiyo Honmaru is also an aluzoe sake. It is also inexpensive, at around 2500 yen for a bottle, including tax. If it's this good, there's no reason not to buy it. The only problem is that it's not very common.

I've reached the milestone of 200. When I was thinking about what to open, I remembered the first time I drank it, and chose Tasake. Incidentally, the first time I drank it was quite a long time ago, and the taste is somewhat different from the current one. It has a fruity aroma and a mellow flavor. It has a good balance with a hint of acidity and is supported by many fans. It has a face as a sake that can be easily matched with a wide range of dishes and is very delicious. This is the special junmai of today. What was it like in the past? It was a refreshing dry sake with the aroma of rice. You can hardly feel the sweetness and the acidity is moderate and crisp. I remember that it went well with sashimi and fish dishes, and I had the impression that it was similar to the Danrei dry taste represented by Koshino Kanbai and Hakkaisan. Those were the days when Jyuoshiyo was all the rage and you could buy it for a little more than the regular price, and I miss thinking that this type of sake would become mainstream in the future. Since then, I've been away from sake for a while, but after about 20 years, the basic grade of sake has changed to a more modern style. The core of the brewery has been retained while the changes have been made. This is probably the reason for its strong popularity.

The third bottle of Hiyaoroshi is Choyo Fukumusume. Along with Toyo Bijin, it is a brand that represents Hagi City in Yamaguchi Prefecture, and expectations are high. It has a fruity aroma for a Junmai hiyaoroshi. The taste is also fruity and sweet, with a smooth umami taste in the middle, and a dryness at the end, and then a sharp finish. There is also some lingering. It's a little sweet, but it's a well-balanced Hiyaoroshi.

The mornings and evenings are getting chilly. And it's autumn, the season of taste. I bought this sake at a liquor store I hadn't visited in a while. The first glass is a cold sake. The aroma reminds me of sweetness like burnt caramel. It has a beautiful amber color. It has a thick sweetness that is unique to low-polish Junmai Genshu. It is said that this unique sweetness comes from the 4-stage brewing process. However, it doesn't feel too sweet because the acidity from the Ikamoto brewing process balances it out. The acidity itself is moderate, so it doesn't bother me. When it's warmed up, it becomes more intense and you can clearly taste the umami. In a word, it's rich and sweet. It was also excellent warmed and cooled. It's literally a natural sake made with natural rice, and if I had the next day off, I'd drink it until I was a gibbering wreck.

The first bottle of Akiage Hiyaoroshi is from the guess. I will eat it. If you drink it cold, it's like pineapple squash. Even though it's supposed to be fire-roasted, it's still very refreshing. It should be delicious even when warmed. At the end of the sake, it finishes with a hint of bitterness. My personal evaluation is that it is a perfect Kinjaku. You can drink it by itself without limit, but you can also enjoy it with most of the autumn tastes. It is difficult to obtain, but I hope many people will try it. A hundred words are only one drink.

Early autumn deer. I chose Nose, Settsu. The reason why I chose it. Because it was the only one in the liquor store. We started with a cold sake. It's not as dense as you might expect from pure rice and 75% polished rice. It's surprisingly light and refreshing. When I warmed it up, it had a fuller flavor, but the sweetness was subdued. This is a sake for eating. It doesn't get in the way of the meal, but it doesn't have a synergistic effect either. Personally, I felt it was lacking on its own, but when combined with a meal, it brings out the flavor of the meal. I think it is a perfect sake for the coming season.

This is the 4th bottle of Shinsei. It's the cheapest ecru, but personally it's my favorite of all the Shinsei. It is the one that Honmaru is the most favorite in Jyushiyo. As a result of searching for the best combination, I decided to go with Akita x Akita, so I chose Iburi Gakko Tartar Sauce. It is served on the RITZ. The sake is a model of sweetness and acidity. It has a juicy grape flavor. The acidity is moderate compared with last year. You can drink it alone without limit. However, this pairing is the best, to my own praise. There is no indication of the ingredients in the tartar sauce, but it has a hint of smoked bacon, which adds complexity and breadth to the flavor. Ah, happiness. Let's work hard again tomorrow.

Omachi following Isshaku-Suisei. Kaze no Mori + Omachi. The mineral aroma is probably from the ultra-hard water. The sweetness is as rich as the richness of the low polished pure rice wine. The juiciness is also explosive. The circle of flavors overlaps many times, and the characteristic sweetness is not a single flavor, but rather the complexity unique to Omachi. It's really delicious and I wonder why it's so cheap. Well, I'm sure it will be empty tomorrow.

This is the second issue of Shinsei following Lapis. I bought it at the liquor store run by my classmate from my school days as before. The aroma is like a green apple. From the first sip, the sweet and sour taste is overwhelming. The "acidity" of sake may be liked or disliked by different people, but the acidity that is common to all Niimasa sake is so popular that I don't think it needs to be said. It has a sweet and sour taste like a green apple. I have often seen it described as an elegant white wine, and that is exactly what it is. I would like to enjoy the change with the passage of time.

We drank mostly at home this summer too with Corona calamari. Looking back, I think I drank more sake than beer. It's time for the last part of the summer sake season. This is the one I chose. Haginotsuru, a sake with an outstanding sense of stability. The summer sake is no exception, and the solid drinkability is excellent, without a hint of lacking. The sweetness, slight acidity, tangy spiciness, and sharpness of the throat are the quintessence of a talented brand. It is delicious and does not betray your expectations. The cute label is also backed up by the certain ability, and I even feel cool. We enjoyed it again this year.
