This is the last one. I thought about trying long aging, but I wanted to drink something simple and delicious. Aroma and taste like mango and apricot. The sweetness comes first, as it should, but it is not clingy, and the acidity balances it out nicely. Combined with the low alcohol content, you can drink as much as you want. I paired it with various kinds of cheese. I was very satisfied with this sake as a closing drink. For the time being (at least a year or more?) after tomorrow I will stay away from alcohol. Not because of illness, but because of work. I have enjoyed posting for almost 2 years. Thank you to the many people who have given me heart buttons and messages. Take care of your health and have a wonderful sake life!

Last spurt. The next one will be the last. It will be opened because it is a raw sake and not suitable for long-term storage. Berry aroma. Sweetness prevails, no acidity. The umami flavor also peeks out. Slight bitterness is gradually detected, and it finishes with a moderate aftertaste. It is best served with meat dishes. However, it is best enjoyed on its own.

A competent brand. It is an expensive spec for evening drinking, but I was really curious about it, so I bought it (2,200 yen including tax). The first sip was clean, refreshing, and honestly, "What? Like this?" I thought, "I'm not sure I can do that. However, as I continued drinking, the true value of the drink was revealed. The image of beautiful sweetness and umami flavor accumulating rapidly fills me with a sense of happiness. The reason why I feel this way even though it is not persistent and has a short aftertaste may be because it is a high-quality sake brewed with good rice and water. I have a feeling that this is not the only reason. It is a simple yet extraordinary sake. This is the limit of my poor expression. If you are interested, please try it once.

Second bottle of spring sake. Is this a classic? A hanami sake that is both delicious and gentle. My personal preference is room temperature. So, if you don't have the Corona disaster, this is one you want to bring in a bottle to the hanami place and drink it with your friends. It has a soft rice aroma, sweetness, and umami. I would like to pair it with seasonal ingredients.

Only one week left until the transfer (which will make it undrinkable for the time being). I'm going to release all the stock, leaving only a few bottles of Shinmasa Colors to enjoy aging. First, let's start with Tobiroki. In my opinion, it is the ultimate food sake, twinned with Hakurakusei. However, this one is not at all lacking on its own. It seems to go well with anything as long as it is not heavily seasoned. Of course, you can also enjoy it on its own. Personally, I like this Black Label the best, and after enjoying the tight flavor of the snow-cold sake, I bring it back to room temperature and am enchanted by its elegant sweetness. It is a legendary brand that lets you feel the goodness of rice and water straight away.

I feel the arrival of spring day by day. In addition to its appearance, I bought it for its low alcohol content, which is currently booming. The mouthfeel is reminiscent of soft spring sunshine. A nice aroma of soft rice malt. The sweetness is clearly felt, but because of the low alcohol content, it is not clingy and fades away in a good balance. It has a strong umami as a junmai sake, and seems to be a perfect complement to meat dishes. Half of the bottle was gone in no time at all, but my sense is that it was only about 1 gou. I will leave the rest of the sake for lukewarm heating at a later date.

One recommended by the liquor store. Mansaku no Hana is one of my favorite brands. It is only available at this time of the year and has a list of tags that heighten expectations: Junmai Ginjo, Nama Shu, Harazake, Arahashiri. Bon appétit. The first impression is dry besides. Immediately, sweetness and graininess follow, but then a gushing roughness comes to the forefront, as if it were a memory. It is the type that gradually comes into its own. As the temperature rises, its assertion can be felt more quickly and clearly. The end of the bottle is also satisfying. I am going to start the last spurt of my contribution soon.

I was mistaken. I thought that all the hanging outlets had moved to Kutouryu, but it seems that Jungin is still released by Kuroryu as in the past. Well, I don't mind either way as long as it tastes good. The difference from Honjozo Dorokuchi is whether it has a clean mouthfeel or not. This one has a beautifully sharp but light mouthfeel. The Honjozo has a higher alcohol content, but the overall flavor is darker with more complexity. Personally, I would recommend the Honjozo Dorokuchi. To avoid misunderstanding, I would like to add that the perfection of this one is also exhilaratingly high, and the point is that it depends on how you drink it and the next day. I don't recall ever missing out on anything named "Dorokuchi".

A local brand of Toyo Bijin. Although it has been around for quite a long time, it has been brushed up year by year, and its perfection in recent years is unrivaled. Gorgeous fruit aroma. After the sweet, tasty, and rich aroma, it quickly finishes with a hint of spiciness. Mr. Sumikawa, who trained as Mr. Takagi's apprentice, brews this limited-edition sake with a supreme finish reminiscent of Jyushiyo. It is a one-of-a-kind gem that does not simply imitate, but rather pursues an original brewing style. It is a must-try for those who enjoy the taste of Jyushiyo. The price is a little high, but it is much easier to obtain than Jyushiyo, which is also a recommended point.

We have previously introduced this fire-roasted. Raw is only available at this time of the year. Taste the difference. Banana-like aroma. Sweetness with acidity reminiscent of citrus. It finishes with a soft bitterness. This series of flavor changes flow modestly, as if it were low-alcohol, so you will not be able to stop drinking. I felt the sweetness and umami more strongly in the hi-ire version. As I will be transferred to a department where I cannot drink alcohol from the end of this month, I will make sure to save up enough to drink.

It's that time of year again. It's been a long time since I've had a sake to guess. Let's see how this year's performance is. As soon as the bottle is opened, the pineapple is in full bloom. The taste is the very fruitiness that spreads in your mouth the moment you bite into a pineapple that is ready to eat. It finishes with a minerality that is still pineapple. If this wine were available all year round, it would be a winner, but the rarity of this wine is what keeps fans coming back for more. Oh, I am fascinated by Kinjaku again this year...

This is a challenge sake from a legendary brand. It seems to have been made to meet today's needs, but it's a talented brewery, so I opened the bottle with high expectations. By the way, I like the classic Benisu best in the Kubota series. It has a gentle aroma of rice malt. At first sip, I feel like I'm drinking sweet sake. The back label says it is fruity, but it is more of a rice flavor type. It is very sweet. It has an excellent aftertaste that makes it easy to drink, and its low alcohol content and low price make it perfect for weeknight drinking. The low alcohol and low price make it ideal for weeknight drinking. It seems to go well with strongly flavored dishes, especially meat. Speaking of which, tomorrow is the Peach Festival. I think it fits the image of white wine perfectly.

Also known as Momoten. This is one that has already been introduced by many people. I'm going to have it while reading the dancyu in which it is published. Mild aroma. Natural peach water with a moderate sweetness. But that's just the first touch. From the middle, you can taste the flavor and a slight bitterness. I wish I had opened it on a day when I didn't have to work the next day, because it was crisp and inviting for the next drink. Tenbi is not to be missed.

It's the first time I'm up for something. It's been two years since I drank it, and ten years since I bought it. It's been two years since I drank it, and ten years since I bought it. This is the brand that, along with Tobiroki, made me fall in love with sake, but even so, I had no intention of buying it at anything other than list price, and only bought it after accumulating points. Kakushin recommends drinking it within three months, so I'll open the bottle, though it's not a special occasion. It's gorgeous, fruity, sweet, and delicious. The majestic orchestra of these flavor tags, which come out one after another, complete with the freshness unique to nama-shu, is a sight to behold. Although Honmaru is ranked low in this brand, the moderate miscellaneous flavors are a nice accent, and it is my personal favorite specification. I will enjoy the happiness of having a bottle all to myself for a while.

One of the Next 5. It is a stable brand that is delicious no matter what you drink. This is the first time I've had this spec, but I can open the bottle without feeling even a millimeter of anxiety. The aroma is delicious. You can feel the sweetness and the stimulation of the alcohol at the same time, and it ends with a bitterness that is quite assertive. It can be enjoyed on its own or as a sake-within-a-sake, and although it says it needs to be refrigerated, it tastes even better when heated. It's a great all-rounder. I have another bottle of it on the way, and I'd like to compare the two.

This is the Risshun Asa Shibori that everyone has been posting. This one is a gift, but I would like to open it immediately to enjoy its freshness. It has a sweet fresh ramune taste. The richness unique to unpasteurized sake makes a big impact. It's the essence of freshly squeezed sake. The alcohol content is a little high, but it has a nice finish, so I think I could finish it in one go if I wanted to. It's still a long way to the weekend, so I'll close the bottle halfway tonight.

I bought it as a curiosity. This brand is famous for being cheap and tasty, but this one is a bit pricey. It is said that this sake was used as part of the rocket fuel for the successful launch of Japan's first private space rocket (the one that Mr. Takafumi Horie tried). I don't know about that, but I'm happy for him. It has a fruity aroma and taste. On the other hand, it has a strong alcohol feeling. So, I would rather enjoy it in small sips rather than gulping it down. I would like to close my eyes and think about the farthest reaches of space... I would like to have that kind of relaxation on weekends.

The ultimate food wine. I can say with confidence that it's the ultimate food wine, and the level of perfection makes me groan. Of course, it has already been proven that it is delicious enough to be drunk alone, and we had it with dinner as usual. The taste was refreshing, but also tasty, with a perfect balance. As a result, it has a magical quality that makes it difficult to know when to stop drinking. It really comes into its own when paired with a meal. One plus one is more than three, and the whole taste is amplified. The neatness of the sake recedes into the background and the umami comes to the fore. No, it's well made. It's not on the same track as the successful sweet and juicy line, but it is an incomparable sake that has established a solid position.

First drink in four days. I chose Wakanami. It is brewed with Jugenmu, a locally produced sake rice. If you look at it only as a junmai sake, you tend to imagine a robust flavor, but if you actually drink it, it is the exact opposite. It is fruity and sweet first. After that, the voluptuous umami spreads out, and with a slight alcohol sensation, the taste finishes off. I wonder if Wakanami is unified in the brewing of sweet and refreshing sake. It is a stable taste that can be drunk with peace of mind.

Less than 1,500 yen for a No. 4 bottle. Considering these specs, it's unbeatable. I didn't have to worry about whether to buy it or not, as it also brought back memories of the blue label (origarami nama) Cheers that I drank before, which was similar to Sagami. Right from the opening of the bottle, I could smell the solid fruit aroma. While the blue label was full of milky rice flavor, this one had the same fruity sweet and sour aroma. The difference is clear, but this one is also very tasty. I haven't had all of the Enazan yet, but at least the Cheers series is my personal favorite. This series was designed to cheer up the world suffering from the Corona disaster. There are other colors available, but most of them seem to be limited edition, so if you're interested, don't delay.
