It is a serious brand that uses local sake rice and brewing water, and competes only with 65% polished Junmai-shu. It is delicious.
It is a light and dry sake, but it is more modern than classical, and as you drink it, the flavor becomes more pronounced.
It is said that the reason why you can taste a hint of saltiness is because the brewery, the rice fields where the sake rice is grown, and the place where the brewing water is collected are close to the sea.
We paired it with fried oysters and boiled squid, but it will go well with anything seafood related.
