Alcohol content 15%, rice polishing ratio 60%. I have wanted to try this Atago no Matsu for a long time. It is as delicious as expected. I got it when I went to Miyagi. The rice flavor spreads with a hint of sourness. As you swallow it, the acidity spreads and it has a sharpness. It is a well balanced sake. The label reads, "We are working on the theme of 'the ultimate food sake. It enhances the potential of food while also bringing out the flavor of the rice. Please enjoy the crispness that is strictly controlled at -5 degrees Celsius". I wish my neighborhood liquor store would carry it.

100% Omachi from Akaban, 60% polished rice, 16% alcohol by volume. When you drink it, you can taste the acidity of the sake's sake yeast, but it is not so strong and is easy to drink. It is a well-balanced sake with the umami of Omachi. It is good to drink with a meal, and seems to go well with both fish and meat dishes. It has been quite a while since I have tasted Kuroemon. I heard that it won the top prize in the sake category at the International Wine Challenge. Congratulations!

The bottle reads, "We blended the "Aragashiri" and "Yame" portions of Junmai Ginjo and bottled it for the perfect midsummer flavor. There may be some light nigori (a light cloudiness) in the bottle, but we have left it as it is. Please shake well before tasting. Indeed, we enjoyed it cooled down thoroughly during this hot season.

Polishing ratio 90%, alcohol content 16%. Great limited edition! The first Niida Zenshu. When I put it in my mouth, a pleasant acidity reminiscent of old sake spread out. It has a unique acidity that is typical of a sake brewed with a "nama yeast" yeast and the full-bodied flavor of 90% polished rice. It did not go down smoothly, but it did not have any unpleasant taste. We served it chilled, but we felt it might be easier to drink if it were heated up.

Polishing ratio 555%, alcohol content $16.00. Sake degree +4.0, acidity 1.7. Sake strength +4.0, acidity 1.7, 100% Hitomebore rice from Naruko, Miyagi prefecture, Miyagi yeast. The first sip was unintentionally delicious. The flavor, umami, and aroma were refreshing. Even the special junmai is polished to 55%, and the sake is carefully crafted and beautiful. The label reads, "Drink Naruko Onsen Water 《Brewing Water》 Naruko Onsen, Miyagi Prefecture, has long been renowned for its famous hot springs. The label introduces it as "Matsubara-source," which was developed for drinking on the advice of a doctor and a university professor from the source that gushes out naturally from 600 meters below the ground. Personally, I have fond memories of visiting Naruko Onsen several times when I was a child with my late grandparents. I also took my parents there before Corona. It is a place that holds a special place in my heart.

Yamahai pure rice, brewed in natural Akita cedar wood vats. Alcohol content 16%, rice polishing ratio 70%. This sake has a bone-like flavor typical of Yamahai Junmai. However, it also has a smooth and gentle feel on the tongue. It is light and tasty, with no hint of a cloying taste. I did not detect any aroma of wooden vats. According to the explanation on the label, "This product is brewed in a wooden vat made from over 200-year-old amasugi (natural Akita cedar) trees that were cut down in the Yondai River basin in Akita Prefecture around 1975. Amasugi is a durable wood with narrow annual rings and little shrinkage. Above all, it is characterized by its beautiful, brightly colored grain. We wanted to convey this beauty, so we photographed the surface of the vat and used it as the background for the label. Later, we thought it was impossible to obtain amasugi because logging was banned, but Odate City's Kutsuzawa Seisakusho kindly gave us some of their carefully preserved amasugi for our use. I will not explain the sake at all. I hope you will enjoy the beautiful grain of the wood on the label and think about the passage of time," he said.

It has the umami and sweetness of full-bodied Yamadanishiki. The fruity taste spreads on the palate. It is a delicious wine after all. It goes well with yellowtail stewed with ginger. It is not only good with fish dishes, but also with meat dishes because of its robust flavor. I really like Amego no Tsuki. I am careful not to drink too much.

100% Gohyakumangoku produced in Tochigi Prefecture. Polishing ratio 60%, alcohol content 16%. The bottle is a very beautiful summery blue color. It is crisp and tasty, with a tangy, Ihyakumangoku-like flavor. As I drank it slowly, it approached room temperature and the flavor became richer and fuller. I was reminded once again how delicious this sake really is. The label says, "All of the rice used for the sake is Gohyakumangoku grown in Tochigi Prefecture. It is a cool and refreshing special junmai sake with a light but plump rice flavor on the palate. Of all the sake made with Gohyakumangoku, this was my favorite.

Junmai sake. Unfiltered, unpasteurized, unpasteurized sake. Made with 100% Nara-grown Akitsu-hokko. The rice polishing ratio is 65% and the alcohol content is 16%. When you open the cork, you will hear a light popping sound. When you bring it to your mouth, you will enjoy the freshness, the fruity aroma of Akitsuho, and the refreshing flavor. It is a delicious sake typical of Kaze no Mori. The colander is "a technique unique to our brewery. It is a technique to collect sake oozed out by osmotic pressure. It has both richness and transparency in both taste and aroma. As one would expect from the Aburacho Sake Brewery.

All Omachi, Okayama is used. Polishing ratio 55%. Alcohol content 15%. We had it again this year. The aromatic flavor and umami are as expected. The good points of Omachi were brought out well, as it was the same as last year. It is aromatic and full-bodied, but not cloying, and goes well with any dish. I think this is one of the good things about the Saku. This year, too, it has progressed well.

Polishing ratio 55%, alcohol content 15%, Sake degree +7, acidity 1.2. This is the first sake I have ever had. My impression is that it is a traditional sake. It is a type of sake that I don't drink very often. It's not the type of sake that you drink in a strong gulp, but rather one that you enjoy in small sips. I wonder if it would change a little if it were heated up, but I didn't have the chance to try it. I think so, but it was gone before I tried it. It was a 300 ml bottle that I bought at a local supermarket, so it ran out quickly.

Alcohol content is between 15 and 16 degrees C. Polishing ratio is 60%. This is the first Tenjo Yumegen in a long time. It is a pure white sake like doburoku. The bottle is 500ml, and when you open the cork and pour it into a sake cup, it pours out slowly. When it enters the mouth, it tastes a little sweet, but it is not difficult to drink at all, and the flavor spreads. It is delicious. It is somewhat like an easy-to-drink amazake with alcohol content. I don't often drink nigori sake, but I like this sake. As always, thank you to the liquor store for recommending it to us.
