Alcohol content is between 16 and 17 degrees C. Polishing ratio is 55%. The rice used is 100% Koshitanrei produced in Niigata Prefecture. It has been a long time since Kamizenjosui was bottled. The bottle is as stylish as ever. It has a strong umami and a little sweetness. It is easy to drink. As it approaches room temperature, the richness of the flavor increases. You can feel the umami of rice as if it is hiyaoroshi. The acidity characteristic of hiyaoroshi is not so noticeable. It is just plain delicious. It seems to go well with any dishes. It is good to drink Kozen Josui once in a while!

100% Kuranohana from Miyagi Prefecture, 50% polished rice, 16% alcohol by volume. Miyagi yeast is used. It has been a long time since I have had a bottle of Suminoe. It has been difficult to find it in our neighborhood, but we finally found a liquor store near our house that carries it. It has a clean and crisp taste. It goes well with all kinds of food when it is well chilled. It seems to go especially well with seafood. After all, Suminoe is delicious. The label says, "The second generation of the series was created using local rice, water, and yeast from Miyagi Prefecture, with the theme of pure, unadulterated, sharp, and dry (=SoLID solid). It is a sharp and dry junmai ginjo-shu that is fully fermented at low temperatures and retains not only the spiciness but also the clear taste of rice. This season's Kura-no-Hana has no summer temperature problems and the sake rice is of very good quality, resulting in a very harmonious, very dry sake. Please give it a try. It is a delicious sake with a delicious umami flavor and a refreshing sharpness.

Junmai Daiginjo. Alcohol 14%, Polishing ratio 50%. The full-bodied and umami taste with a fruity sensation develops. It has a gorgeous aroma and a crisp, refreshing taste. It is delicious during the hot season. I felt that there is a good balance between the umami of Yamadanishiki and the tanginess of Gohyakumangoku. The label says, "This series uses only rice produced in Chiba Prefecture and explores its charms and possibilities. This year, it will be available in a light nigori (light cloudy) color! The corporate color blue represents our mainstay rice, and we titrated it to reflect the fact that our master brewer carefully controls the unrefined rice as if he were handling jewelry. We aimed to create a fusion of a delicate, smooth texture and fine gasiness." Of the DISCOVERY series, this is one of our favorite sakes.

It is still hot, but as nightfall approaches and the sound of insects can be heard, this is a sake that makes you want to drink it slowly.

Polishing ratio 55%, alcohol content 15%. It has been a long time since I have had this sake. The ingredients are rice, rice koji, and carbon dioxide, so when you open the bottle, it starts to sizzle like a cider. The fine bubbles from the carbonation make it refreshing and crisp on the palate, and you can taste a little acidity. After that, a slight bitterness can be felt. It is a refreshing sake to drink during the hot summer season.

Junmai Daiginjo. Polishing ratio 50%, alcohol content 14%. This is the first Discovery series since Identity, which we drank last year. This year it is from Adapt. It is light, cloudy, and tangy. It has the same gaseous sensation as the steadfast Fusakogane. I wonder if it rounds out after a little while after opening the bottle. It has a delicious aroma and flavor of rice. When it goes down the throat, you can feel a little bitterness or astringency. This area may be different for different tastes. The label reads, "This series uses only rice produced in Chiba Prefecture and explores its charms and possibilities. This year, it is a light nigori (light cloudy) sake! The theme of this series is to "adapt" to the rapidly changing climate and world of the past few years by improving our technology. We have designed it to be served at this time of the year. We aim to create a flavor that is "adaptable" to the occasion and the times in which it is consumed. I would like to try the other Discovery series if they are available.

100% Shizuku Ehime produced in Ehime Prefecture. Polishing ratio 60%, alcohol content 15.5 degrees. It is a refreshing drink with a deep, dark rice flavor. It has a sharp taste with a slight sourness as it goes down the throat. It is a delicious sake to drink slowly on a summer evening, and it is the first Kagiya I have had in a long time. This sake is made from Ehime Prefecture's first sake rice, "Shizuku Ehime," and is a junmai sake characterized by a cool, refreshing taste and pleasant aftertaste. Some people watch fireworks with various feelings and emotions.
