The aroma is discreet, but a slight sweet aroma of rice and a calm lactic acidic aroma rise up. The mouthfeel is clean and crisp. It has a refreshing finish with a full, rich junmai-like flavor of rice.
It has an elegant, slightly honeyed aroma, and when the glass is turned, it seems to melt in the mouth. The moment it enters the mouth, a soft sweetness spreads softly, followed by a grapefruit-like sourness and bitterness, like cotton candy or grapefruit jelly covered with syrup. The taste of French Brie cheese was also faintly perceptible. Is this elegant sweetness the result of Hyogo's Yamada Nishiki?
It was easy to drink and tasty, with a very rich sweetness on the palate and a bitter taste of alcohol, but the aftertaste was much more refreshing than the mouthfeel.
