Polishing ratio 90%, alcohol content 16%. Great limited edition! The first Niida Zenshu. When I put it in my mouth, a pleasant acidity reminiscent of old sake spread out. It has a unique acidity that is typical of a sake brewed with a "nama yeast" yeast and the full-bodied flavor of 90% polished rice. It did not go down smoothly, but it did not have any unpleasant taste. We served it chilled, but we felt it might be easier to drink if it were heated up.
