Soba noodles from Sapporo Raccoon Alley. 3rd glass of "Ishizuchi" junmai sake from Ehime Matsuyama. It also has a mild taste. The snack was a persimmon with celery....it was scented with black tea leaf powder.
The store staff recommended drinking it hot 🍶.
It has a fruity taste with no alcohol. But the aftertaste is pungent and punchy. ‼️
I guess there are different tastes.
The aroma and flavor of rice is amazing. It is crisp and refreshing in the mouth, but tastes delicious with the sweetness of rice later! It is a medium dry taste that I like.
It goes well with any dish. I toasted it with sashimi of Akinatai fish and squid.

Ishizuchi Tokubetsu Junmai Hiyoroshi is a dry, food-friendly junmai that is perfected in autumn.
Designed to be paired with seasonal dishes, this is a special autumn-only bottle.
Hiyaoroshi" refers to new sake created in the spring that is left to mature over the summer and is ready to drink in the fall.
It is said that sake is only complete when it reaches this stage.
The rice used for this sake is Matsuyama Mitsui produced in Ehime Prefecture.
The rice polishing ratio is 60%.
The yeast used is a Kumamoto-style yeast that is cultivated in-house.

The spiciness is moderate, and you can taste the delicious flavor of rice. The unique acidity and slight bitterness in the aftertaste. There is a taste that can only be found in this sake.
This is a check-in for a souvenir I purchased on a trip to Shikoku 🚗 3 years ago. At that time I knew little about sake and when I was lost in the product recommendation card, I bought it because it said Ishizuchi 😆 I don't remember the details without notes, but I still have the impression that it was relatively easy to drink 😊.
