Polishing ratio 60%, alcohol content 14%. It has been a long time since I have had a ganki. When you twist the cap, bubbles start to rise to the surface like carbonated cider or ramune. Wait until the bubbles stop before opening the bottle. When you finally open the bottle and take a sip, you will feel a sizzling sensation on your tongue and the flavor will spread. I feel that the oli enhances the umami. I don't really like sparkling wine, but I think I like this one a lot. It has a nice sharpness to it that keeps me going. The "Sakuraebi Sembei" (sakuraebi rice crackers) that I received as a souvenir from Shizuoka was a nice accompaniment to the sake.

Polishing ratio 45%, alcohol 16%, sake degree -1.5, acidity 0.8. Purchased in Miyagi Prefecture, where I visited for the first time in several years to visit a relative. It is an original bottle from Nishijo Sake Brewery. The label is a stylish design of a rising dragon, which appears when the bottle is turned sideways when poured into a glass. It is delicious with a fruity aroma and an aromatic mouthfeel! It also has a sharpness that keeps you going. It is a very beautiful sake with a sophisticated feel. It is a sake that is hard to find in the Kanto area. Since the brewery was nearby, I wondered if my grandfather, who loved sake, drank sake from this brewery. I was thinking about it as I enjoyed the sake.

Polishing ratio 60%, 17% alcohol by volume. Brewed in 2001 in limited quantities. I told the liquor store that I was not a fan of old sake, but they recommended it so highly that I bought it. I am glad I bought it! I mean, I had to repeat it. The sweetness and flavor filled my mouth as I sipped it with the unique aroma of old sake. It is a combination of whiskey, bourbon, and the best of both. It is extremely tasty! The current year is 2023, so it is 22 years old, which is before the Japan-Korea World Cup. I am grateful to the pot store for offering this sake at a reasonable price. I thought it was impossible to drink old sake, but this was a bottle that changed my image completely.

Dry Junmai sake. Made from 100% Gohyakumangoku rice. Polishing ratio 80%, alcohol content 15.5. The sake has a refreshing and clear taste with no clutter, which is hard to believe for a sake made with 80% polished rice. It also has a sharpness with a hint of acidity.
