Polishing ratio 60%, alcohol content 14%. It has been a long time since I have had a ganki. When you twist the cap, bubbles start to rise to the surface like carbonated cider or ramune. Wait until the bubbles stop before opening the bottle. When you finally open the bottle and take a sip, you will feel a sizzling sensation on your tongue and the flavor will spread. I feel that the oli enhances the umami. I don't really like sparkling wine, but I think I like this one a lot. It has a nice sharpness to it that keeps me going. The "Sakuraebi Sembei" (sakuraebi rice crackers) that I received as a souvenir from Shizuoka was a nice accompaniment to the sake.
