Extremely personal preference: ⭐️⭐️⭐️⭐️4/5 This is a sake that supports Noto by drinking it, and they are going to donate 1,000 yen per bottle to the sake breweries in Noto that were affected by the earthquake and tsunami. In this sense, it is worth drinking. I'm not a big fan of kijo sake and usually avoid it, but this one is delicious. ❗️ Maybe it's a good match for Yoshida Kurau ✨. The top aroma is fresh banana. The nose is fresh and firm, with a hint of banana. There is a fresh, firm citrus sweetness to start, with a heavy Orangina feel (though the carbonation and juice strength are completely different). The citrus juiciness and the hints are like the darker side of a ponkan. It is full of flavor and more mellow, but not too sweet, and is easy to drink. The lingering ponkan sweetness and bitterness is pleasant 🥹. The balance between fruity sweetness and light acidity is very good, so it's not too heavy, but I think it has a citrusy freshness. Surprisingly, it might be interesting to lay down for a couple of years. Maybe I should go buy another bottle. Anyway, I don't usually drink kijo-zake and my wife enjoyed it very much. After drinking it, we naturally clasped our hands together to say "thank you for the sake" as shown on the nice yellow label. Wish for NOTO

Extreme personal preference ⭐️⭐️⭐️⭐️✨4.5/5 I think this is my first time drinking Kangiku at home 😋. The cute label makes me long for spring 🌸 Popped the cork hard! I'll have the top clear liquid first 🙏. Tingling and lovely gassy sensation on the tongue ✨. Somewhat floral, some kind of floral aroma 💐. And a refreshing apple🍏melon🍈 sweet acidity that is very pleasant 😊. When the tailings are involved, silky & milky & gentle sweetness spreads in the mouth, and the sharpness of the kitashizuku collects them with freshness, and the sweet and sour lingering taste is the best 👏. Very, very delicious 🙇🏻 (Alcohol : 15 Sake degree : -5 Acidity: 1.6 Amino acidity: 0.8 Rice used : Kitashizuku Rice polishing ratio :50%)

Extreme personal preference ⭐️⭐️⭐️⭐️4/5 Today I got myself together, packed my backpack, and took the train and walked to Koyama Shoten for the first time this year🚶‍♂️🎒✨! Well, it's still a sake wonderland, a sake amusement park 🎢🎡 and very crowded even though it's quite spacious😂. I was wondering how many kinds of sake there are (apparently there are over 800 kinds of sake alone) and sake lovers can stay here all day 😍. I was wondering which ones not to buy rather than which ones to buy 🥲. As a result, there were about 20 bottles I wanted to buy, but I had to narrow it down to 3 four-pack bottles that I could walk long distances with my backpack 🥹(some of them are only available in 1 bottle, which is hard 😭). The spoils I had to narrow down to 3 bottles of Yonge, a musical instrument, and a chrysanthemum (I think there are not many liquor stores that have all of these in one store). I looked at my iPhone and saw that I had walked 30,000 steps today, so in order to relieve my fatigue, I first had a glass of sundo from the list 🍶. San-do is still amazing! It has the impression of a light champagne sherry, but why is it so delicious? Of course, the aroma is much more than a fresh rice, so it's totally different, but it's delicious 🌾The green apple muscat flavor pops in your mouth ❗️ and the text is limited, so thanks for the treat 😭.

Extreme personal preference ⭐️⭐️⭐️✨3.5/5 (day 2) Probably my first time with Masuo, and definitely my first time drinking at home 🙏. It's a bit refreshing and sharp, but not too much! But it's a little refreshing and sharp 👍But the impression is rich and mellow 🍶. The second day, the acidity is lessened, and the flavor is more integrated 😊The sweetness of the rice comes out and it is heavy and juicy, and the melon type sweet and bitter taste is delicious. Even on the second day, there is a certain sharpness 👏. Lingering sweet and sour 👌 for a long time. On the third day, the acidity fades considerably and becomes too sweet, as well as having a strong miscellaneous taste. However, when warmed up to human body temperature, it is sweet but soft and delicious 😊. Ishikawa sake is also delicious heated 💪. Extremely personal preference⭐️⭐️⭐️✨3.5/5 Yoshida Sake Brewery continues with Tetorigawa ✨✨. First, open the bottle and lightly pop it ❗️ Fresh and gassy on the palate 👏. Brilliant but refreshing rice aroma 🌾🌾. Similar to the endorsement, but with green apple juiciness and limey fresh acidity ✨✨. The impression is light, not heavy, with a strong rice flavor and sweetness 👍. It has a clean and sharp taste. It also has the atmosphere of white wine. Although it is a daiginjo, the aroma is mild, so it is a food sake that goes well with sashimi 😊. It's so easy to drink, you'll find yourself drinking more and more ✨. Thank you Yoshida Shuzo for the food 🙏. My personal preference⭐️⭐️⭐️⭐️4/5 I went to the liquor store where I bought the Ishikawamon a few days ago and they had it ✨I was curious about it so I bought it immediately👌. This is probably the first time I've had Hyakumangoku No Shiro 🤔. I still like it a lot ✨. It's clearer and lighter than Ishikawamon but not too sharp. I liked the gentle sweetness and umami of Ishikawamon, but I also like the clean beauty of Hyakumangoku No Shiro. It really is beautifully delicious. It is a wonderful sake rice 🙏. It is sweeter and closer to Ishikawa Mon on the second day due to the fact that it's a draft sake, but I think you can feel the goodness of Hyakumangoku No Shiro on the first day of drinking ✨✨. This delicate flavor is the result of the terroir of rice, water, and yeast, which we call "modern Yamahai" 👏. I'm definitely curious about the fire-aged version as well, since Yoshida Kurau has such a delicate way of brewing even the raw sake. But I haven't seen much of it, so I'll keep my mark on it👍. I'm reminded once again that I want to support the recovery of Ishikawa sake, even if it's only a small part of it ✨✨. It was a real treat 🙏. (Raw material rice: 100% Hyakumangoku No Shiro, Polishing ratio 60%, Alcohol 13%)

Extremely personal preference ⭐️⭐️⭐️⭐️4/5 This is my first time drinking Yoshida Kurau at home and I love this type 😊✨ The pink swallow label is cute ❣️ First, a strong pon to open the bottle! Super pale white, just a little leesiness, nice tingling on the tongue👍! The "modern Yamahai" made by Kanazawa yeast and lactobacillus fermentation in the brewery gives it a gentle sweet umami and soft acidity 👏. The slight bitterness in the aftertaste is pleasant and lingers on the palate 🍶. 13% low alcohol, light, fresh and really gentle 😆. Come to think of it, "u" is "kind" of "gentle" ✨One more thing, it's your you 😊. (Rice: Ishikawa-mon, Polishing ratio: 60%, Alcohol: 13%, Kanazawa yeast)

My personal preference: ⭐️⭐️⭐️⭐️4/5 (when heated) It used to have a classic Ishikawa-like image, so I tried it for the first time in a long time 😊. I'll have it cold first 😄. Slightly yellow ✨✨ when you look through it Smoky aroma 👌. Smoked with a fresh attack Full-bodied rice with a crisp acidity 🌾🌾. Comfortable lingering bitterness 😆. Not too spicy, just the right amount of dryness Low smoked depth from start to finish 👍 It has a sense of maturity and this is delicious 😊. But it doubles in deliciousness when heated, definitely delicious ‼️ I like this heated ✨✨ Softly and gradually sweet and spicy smoked 🍶. It's great at any stage of heating up and then cooling down 😋. It's soft and fluffy, and when heated up, it matures perfectly 🥹It's deeply delicious 🙏. Might rival my favorite heated Takashimizu 😂. It's just heated up ✨✨ Hooray for heated sake! My personal preference: ⭐️⭐️⭐️✨3.5/5 I've been so busy during the holiday season that I haven't been able to check in, but I've managed to check in for the first time in 2024 😂. I had a lot of drinks during the New Year's Eve and New Year's holiday, so there's a big traffic jam of things I haven't checked in on yet. Takeba is located in Noto-cho, Hozu-gun, a rather far end of the Noto Peninsula, and is a valuable sake brewery that supports the sake industry in Okunoto. As the label on the back of the bottle says, it is brewed with Noto ingredients, and I am deeply impressed by the Noto-domaine-like style of brewing. I'll have some 🙏. Gentle aroma of rice 🌾. Soft and smooth to drink. Refreshing rice flavor, acidity and richness. It is then sharp and clean all at once. The aftertaste is the spiciness of rice with a slight astringent taste of young white wine. It is well-balanced and well-contoured. It is also great as a mealtime sake 👌👌. And when heated up, the aroma and sweetness stand out and it's delicious. It is perfect when served lukewarm with hot pot 🍲. It was a real treat 🙏. The website of Kazuma Sake Brewery reported that although there was considerable damage to the brewery, all employees and their families are safe and sound. (Sake rice: Noto-produced Yamadanishiki, Polishing ratio: 55%)

My personal preference: ⭐️⭐️⭐️⭐️4/5 (on the day of bottling) Kumazawa Sake Brewery is the only sake brewery in Shonan, Kanagawa Prefecture, located in Chigasaki, and their company motto is "Yobarai makes Japan rich" 🤣✨I think the company motto is just waiting for a lucky break 😭. Kumazawa Shuzo's "Tensei Asashiboribori" is an interesting sake that is bottled freshly squeezed at dawn and sold by the liquor store in the morning of the same day 😊. I drank a bottle over 5 days and it was by far the best on the day it was bottled 👍On the 4th or 5th day, the fruity rice flavor was reduced and the alcoholiness started to stand out, so I heated it up, but that wasn't too bad (it also went well with chicken dumplings in a pot)✨. It's slightly yellow and I think it's just a little bit thicker. A little chili and fresh gas feeling on the tongue. Anyway, fresh ❗️ fresh fruitiness 🍏 with a touch of citrus and green apple, and the sweet fruity taste of the rice ✨. But it's crisp 👍It has a beautiful sharpness ❗️ and clarity 😆🩷. It has a nice sharpness, but the aftertaste is deep with a bitterness like a combination of berries and high cocoa chocolate. Extremely personal preference⭐️⭐️⭐️⭐️4/5 I was curious about this Haneya, which is made from the rather rare Toyama Yumachi ✨. The label is austere ☺️ I'll take it 🙏. Elegant ginjo aroma, elegant mouthfeel 😊. After a light gassy sensation, the palate is pleasantly filled with fresh pineapple from the raw sake, followed later by the sweet acidity of muscat 🍍. It has Haneya's typical refinement of not being too sweet in the aftertaste, but it also has the mellowness and strength typical of Omachi, with a great sweet-acid 😆👍. I opened the 4-goupe bottle in no time because I never get tired of it, and it goes well with food as well. 🙇🏻 Thank you so much for your hospitality 🙏! Extreme personal preference⭐️⭐️⭐️✨3.5/5 Osha label that doesn't look like Miyaganbai👌. It's a collaboration with SENDAI pageant of light. The bottom power of the active nigori, automatic stirring when you open it 😙 but you still get the supernatant part ✨✨. Highly aromatic. The grapefruit-like ginjo aroma is refreshing. At first, a shrieking gassy sensation makes you anticipate what's to follow. Fresh fruity citrus acidity and sweetness. The bitter acidity is pleasant 🥹✨✨ when the tailings are involved. To be honest, I didn't like it on the opening day because of the grueliness in the lees, but after about the 3rd day, the grueliness in the lees is removed and it turns into a nice bitter taste👌. The 3rd and 4th day, the creamy and fruity sweet and sour taste with a touch of gas still remains, and the lingering sweet bitterness also helps you enjoy the drink 😊✨✨. A gem that makes me want to visit the SENDAI Pageant of Light (I've been to the Sendai Tanabata Festival) ☺️ Thank you for the food 🙏🙏. I looked it up 🤗. It is a limited edition brewed with 80% low-polishing rice from Akitsuho, a sake rice synonymous with Kaze no Mori. The "maka-hakuri" method is a unique brewing method of the Aburacho Brewery. Only the part of the sake that drips down from the press without applying pressure is harvested. It is a luxury product made by bottling such a rare sake as it is freshly squeezed. As the label says, it has a slightly sweet aroma of melon banana ✨It has a soft but rich mouthfeel, probably because it is picked in the middle of the bottle, and is pleasantly slightly carbonated from start to finish 👌. Slightly thick but not heavy at all 🥹. There are complex flavors from the low milling, but they're all wrapped up with good acidity and Akitsuho's transparency ✨. The aftertaste is a mellow yellow (old w do they sell it now?). However, after opening the bottle, the acidity is getting stronger and stronger, so it would be better to drink it sooner. I thought, "Wait, I mistook Hanatomoe for Hanamomura before, but I've never had it before" and bought it 👌 Well, I took a sip of the new Hanaboe sake and thought, it's good but I'm in trouble 😂Well, I guess you can like it or not, but it's an interesting taste✨It's hard to describe the flavor. But really interesting flavor ✨. The top layer is light and floral, then covered with a very interesting sourness. It's an interesting sourness that is followed by an astringent sweetness. When the tailings are involved, it becomes more and more complex, with a melon, grain, floral, and new sake-like roughness of rice, as well as the austere powderiness and dryness of the tailings, and the strong acidity that interrupts all of this. My personal preference: ⭐️⭐️⭐️✨3.5/5 (3 or 4 days after opening) You're right, it's better 3 or 4 days after opening: ☺️ On the opening day, there was a bit of bitterness like a too green melon, but on the third day, the sweetness and flavor came out ahead. It is also very clear and beautiful, probably because it is made from "shin-gin" polished rice (flat polished rice). When you drink it, you first get a melon juicy 🍈✨ from the elegant gasiness. It is the third day, so it has mellowed considerably but still has a freshness to it. The muscat in the mouth does a nice job, and the sweet and acidity ride on top of each other nicely 👍. Extreme personal preference ⭐️⭐️⭐️⭐️4/5 Akabu's new sake is indeed delicious ✨✨. Junmai sake is also very cosy (though I was quite torn between it and Jungin at the liquor store 😂). Green apple aroma and a nice gassy feel on opening the bottle 😆. When you drink it, the fresh and light green apple type sweetness and citrusy acidity from the clear and juicy umami combine in the mouth, resulting in a very good balance! The sweetness and acidity come together to push out the umami, giving it a milky impression 🥛. The sweet bitterness lingers in the aftertaste, and the lingering sugar like white peach finally sits in the back of the tongue, increasing the desire for the next cup 😊👍. I think it's a modern medium that everyone loves: ❣️ It went very well with the teriyaki yellowtail 👌😆. My personal preference: ⭐️⭐️⭐️✨3.5/5 I usually like Yame tea and drink it every day, and this is a Shigemasu nigori draft from Takahashi Shoten, a venerable brewery that has been in Yame City for over 290 years in its 18th generation. This is the same brewery as the Kojiya brewery I checked in with before. The top aroma is sweet and distinctive, with a thin layer of residues at the bottom, and when you take the supernatant, there is no gasiness, and the rice-fruity, slightly melon flavor carries a gentle umami 👌 and it is also gorgeous. Then soft cotton candy on the tongue. The aftertaste is a smooth sweetness, but when the tailings are involved, the bitterness and sweetness are a great match👍. When the tailings are all mixed together, a creamy, gentle bitterness covers everything, giving the sweetness depth, fineness, and fullness ✨✨. It's a very cosy sake with an impressive sweetness as gentle as Yamecha 🍶😊. Thanks for the treat 🙏🙏. When I was a child growing up in Akita, there was no "Akita Komachi" and the best rice was Sasanishiki. I don't think it is sold much in supermarkets now, but I was happy when I could eat Sasanishiki as a child, so I remember the nostalgia when I hear the name 🥹. The sake is a little cloudy, though it may vary from one individual to another. The aroma is surprisingly fruity and gorgeous. The mouthfeel is slightly slightly carbonated, with a classic, robust rice flavor and sharp, bitter acidity👍. The bitter sharpness and dryness makes it easy to go on to the next cup 👌. The crisp and light feeling of cooked Sasanishiki may be the reason for the sharpness. It's been a long time since I've had a good old-fashioned Sasanishiki 🥹. Extreme personal preference ⭐️⭐️⭐️⭐️4/5 It's some kind of limited edition sake with a cooling bag 🙂. Yamamoto Pure Black's Nama sake may be rather rare 😊. It comes with an interesting cold storage bag (and it's expensive 😭) ✨. I mean, I bought it for the cold bag 😂. But the main body was also delicious 🍶✨✨. Banana-like ginjo aroma. Slightly gassy on the palate. The juicy rice flavor that is not too sweet spreads in the mouth in a youthful way, and the summer tangerine-like acidity covers them pleasantly immediately. ☺️ This time, the koji mold of Pure Black was changed and the sake is said to be fully fermented with less than 0.1% residual sugar, so it has the sharp taste of a Japanese sword, which is true to the description on the back of the bottle, and is more refreshing and acid-dry than the usual Pure Black ✨✨. Extreme personal preference⭐️⭐️⭐️✨3.5/5 Hi again Tochigi❗️ maybe I was a Tochigi resident in a previous life 😂. The label is cool as always✨ It's rare to see a blend from Mita 🤔. They use Yamadanishiki and Gohyakumangoku for their rice ✨. I was thankful for this first new Mita sake of the season 🙏 and took a sip first. From the muscat aroma, it has a gentle muscat touch. And it's not rough, which is typical of new sake, but rather gentle, fresh and juicy without being too aggressive ✨✨. Sweet and sourness spreads to the palate, with a light wildness👍 of berries and bitterness of gourd at the throat. The lingering sweetness of the muscat, with a gentle blue alcohol taste, gives just the right dry crispness, making you anticipate the next cup 🍶. It has a sense of balance and flavor control that is hard to believe it is a new sake. The sense of balance between the richness and the juiciness that can be enjoyed in a big gulp is superb 😂.
