夏雨Extreme personal preference ⭐️⭐️⭐️3/5 I bought some Akita sakekko because of its nice color and appearance 😭 I want to be careful because if I'm not careful, I'll end up with all Akita sakko (I still have 3 bottles of Akita sakko lying around 😂) It's like they brewed "Ippozumi" with "Association #1 yeast" and "bottle-fired once" and "the young brewers of Ryoseki" got together and test brewed "ONLY ONE" so it's all ONE 🌾✨. I'm a little confused, is it sweet and spicy 🤔? First, a pleasant fresh aroma of Muscat ✨✨. On the palate, the fruitiness of the Shine Muscat, quite sweet and fruity ❗️ to berry-like and the transition to melon sweetness is a delight to the palate 🍈. After that, the custard flavor invades the tongue and is pleasantly spicy with bitterness and strong acidity coming in! The lingering sweet bitterness is well-balanced and finishes with a long-lasting depth 🙏. I think it would be better if it was well chilled so it wouldn't be too sweet 👌 (Sake rice: 100% Ippozumi, Yeast: Kyokai No.1 yeast)

夏雨Extremely personal preference: ⭐️⭐️⭐️✨3.5/5 (only on opening day) Well, I got stuck and bought some Akita sakekko 😂. I can't go west at all 😱. At first there is a little gasiness from the banana flavor 🍌. Then fresh & juicy gourd type delicious acidity in the mouth. Wild acidity covers them, and the bitter & astringent taste typical of Miyamanishiki lingers strongly with alcohol in the finish. The #6 yeast from Shinsei and the Miyamanishiki from Akita Prefecture complement each other by bringing out the best of both worlds: the gorgeousness and sweet bitterness ✨🌾. The sunset orange may represent the exuberance of the setting sun (glamorous) and the awe of the coming night (bitter & astringent). Thank you for the treat 🙏. (Association No.6 yeast, Polishing ratio 5.5%, 100% Miyamanishiki?)

夏雨My personal preference: ⭐️⭐️⭐️3/5 It is a little bit cloudy, and if you look closely, you can see that it is a little bit cloudy. A bit pungent and a bit tangy on the palate. Sour and delicious is what I'm talking about ✨✨. This tastes like an expensive Riesling type white wine 😂. Reasonably priced and something to be gained 😭. Mature fruity 🍑🍑🍏🍑 with green apple, white peach, and apricot coming out 👌. The lingering astringency that doesn't go all the way to bitterness gives it a tannic feel, and the white wine finishes with a crisp astringent acidity 🍾. It reminded me of that sunset sky when I was chasing red dragonflies in Akita, and it was the sad acidity and astringency that brought me back to my childhood 🥹. Thank you very much for the food 🙏🙏. [The rice is 100% Yamadanishiki (Domaine Sakura Yamadanishiki) grown in Sakura City, Tochigi Prefecture.]

夏雨Extreme personal preference ⭐️⭐️⭐️3/5 As I wander down the shopping street during the Halloween festival, I see the word "rainfall". I recall that it had been the talk of the town for a while, winning awards overseas and being sued over its name. I found a half-bottle of it on sale, so I tried it. It is golden yellow in color, with a slight sweet aroma of rice. It has a thick, syrupy texture on the tongue and throat. From the rich cotton candy, there is a wild flavor of Omachi. The mouth is filled with acidity with a sense of aroma due to the hard water of Mt. The lingering finish is pleasantly long with an overwhelmingly beautiful sweetness. It has an elegant, rice dessert wine taste. It's kind of delicious, but half a cup was just right 🤣. 夏雨Extreme personal preference ⭐️⭐️⭐️3/5 There's no way wine yeast can be used to make sake taste good❗️... and it is 🤣 seriously 🫢. Starts with a strong ginjo aroma and gorgeous rice flavor✨ It still has a white wine feel when you drink it! Fresh acidity and sweetness like raspberry, sweet and sour of ripe grapes, grapefruit bitterness that slowly builds, and umami acidity 😋They are all balanced and comfortable without being biased towards any of them. ‼︎ The lingering bitterness gives a sense of depth while the freshness of the white wine finishes it off👌. I would recommend this to anyone who loves wine ✨✨. A great sake 🥹 that is a well-balanced sake/wine hybrid that is not biased towards either 🥹. (Yamada Nishiki)

夏雨Extreme personal preference ⭐️⭐️⭐️3/5 Another bottle opened last week on the Mid-Autumn Moon 🎑. The label is already, I think ^_^ tsukimi-sake🌕. Also, Iki Island, where Shigeke Brewery is located, is home to Tsukiyomi Shrine, the original and head shrine of all Tsukiyomi shrines in Japan. The three deities are Tsukuyomi-no-mikoto, Tsukiyomi-no-mikoto, and Tsukiyumi-no-mikoto, all of whom are related to the moon. So, we will have a cup of sake with Oborozuki again at Yokoyama, a restaurant that seems to have a connection with the moon: ❣️ Yes, it has a nice aroma of rice 👌. When you take a sip, it is soft, sweet, fruity and juicy 😋. And as the temperature rises in the mouth from the muskmelon, it gets even sweeter and sweeter 😋❣️ It's as sweet as a speed wagon (old 🤣) However, it is a refined cotton candy with a light citrus flavor and a sweetness that is not unpleasant! After that, the sugar is mellow on the tongue, but with a light acidity that is not cloying and has a good sharpness. It was a cold wholesale that looked good on a Oboro moonlit night. ❗️ Tsukiyomi is also a sake to be drunk over and over again. (100% Yamadanishiki)

ジャイヴHello Summer Rain ☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀☀. I collect [moon sake] as a hobby, and this one caught my antennae quite well for the first time 😆. It's also an interesting discovery that there are so many expressions on Tsukuyominomikoto, it's a perfect sake for a great moon ✨.
Japanese>English
夏雨Good evening, Jive 🌖. Tsukuyomi, the god who rules the moon and oversees the night, is something fascinating ✨✨. It would be fun to collect sake with a theme such as the moon 👍I should find some new theme too 😆.

夏雨Extreme personal preference ⭐️⭐️2/5 (over slept? In case 😂) Last week, I was thinking about what to drink for the Mid-Autumn Moon viewing, and I opened a bottle of sake that I had bought before and forgotten about, but now it's now or never 🌕. I'm sure my dad at the liquor store told me that it's a drink often used to seduce women, but tonight, I hate to drink alone 😭. The night was cloudy, with only the occasional full moon peeking out from between the clouds. ⛅️ First of all, let's have a cup of sake with the moon. From the refreshing aroma of rice, the attack is a little strong with sweet and sour. Plump acidity from the cotton candy spreads across the palate, changing from sweet acidity to elegant umami acidity 🥹. And if you look up while savoring the bittersweet aftertaste, you will see the Oboro moon. It was a full and elegant sake, perfect for a beautiful moon 🎑. (Hagi no Tsuki is also delicious 😋) (Rice: Yamadanishiki, Yeast: Association No. 10)

夏雨Extreme personal preference ⭐️⭐️⭐️⭐️✨4.5/5 Hmmm, this abe-san is also amazing❣️ I knew it, Abe-san is awesome 😭 Silver last lot of the season? It's so different from the previous lot that it seems a bit of an experimental lot (different sake rice or yeast?). The sake is very good but I can't describe it well 🤣. Honestly, drink it and let me know 😂. Gorgeous aroma of rice, clean rice flavor on the palate and a tingly pleasant light gas feeling on the tongue 🥹. Then, gentle sweetness of melon near the skin, and as the temperature rises in the mouth, is it bitter melon cream or slightly mellow sweetness, bitterness, slight lactic acidity? The sweetness, bitterness, and lactic acidity are very deep in the mouth. The sweetness, bitterness, and nourishment are then covered by a thin veil of beautiful acidity, which is contained within and runs down the palate with a clear and crisp taste ✨✨. The finish is dry and refreshing due to the way the acidity is beautifully applied, making it exactly what the brewer says it will be 👏👏. If you're not careful, it will empty quickly 😭 When I receive Abe-san, I can feel that this sake is made by a small sake brewery that has really tried and made great efforts in brewing it 🙇🏻 Thank you so much 🙏. 夏雨Extreme personal preference: ⭐️⭐️⭐️⭐️✨4.5/5 Mmmm Sentori! Omachi! Nama yeast! Yum! I can only say that it is as good as it should be 🥹. It's also amazing that it's getting better and better every year! It must be the result of research and trial and error 👏. Fresh muscat from the gentle rice aroma, juicy fruitiness. Slight tingling and gasiness that feels good on the tongue. Harmonious sweetness and acidity that is typical of Sentori fills the mouth, immediately followed by a sweet and sour bitterness that encompasses the wild wildness of Omachi, which is tasteful and spreads further into the mouth and throat ✨✨. The lingering taste has the richness of a traditional sake yeast yeast yeast, but finishes light and refreshing 🙏. It's amazing that it's this light and it's still a pure sake. I wonder how the conflicting beauty and wildness can be in harmony 🤔. Is this all coming together because it's a super soft water terroir Sentori? Because it is a domaine? You have to visit the brewery once for this. The way it is made is classic but the taste is like modern. Anyway, it's an amazing sake 😭. Thank you 🙏. (Domaine Sakura - Omachi 80%, Domaine Sakura - Yamada Nishiki 20%, both from Sakura city, Tochigi prefecture)

It's just a very, very personal preference 😂) Well, it's been a while since I've been to Haneya, but it's really good. It is a full and well-balanced sake, just like Haneya, perfect for long autumn nights as the weather cools down👍. The aroma is gorgeous, the taste of the rice makes the mouth full and melon-like 🤣The ginjo aroma is also gorgeous 🍶. The aftertaste is not persistent, and the gentle rice flavor leaves in a flash. It is a really well-balanced and easy-to-drink sake, and it was empty in no time 😭. Thank you 🙏. (Rice <Gohyakumangoku> produced in Toyama Prefecture)

夏雨Extreme personal preference⭐️⭐️⭐️3/5 Well, it's a crazy lingering summer heat ☀️ I found some cheap beef tendon, so I spent 4 hours on such a hot day and cooked beef tendon stew with a lot of sweat 😂. I wasn't sure what kind of sake to serve with it. I bought a bottle of "Kojiya" Junmai Ginjo from Takahashi Shoten in Yame City, Fukuoka Prefecture ✨✨ which was recommended by the owner of the liquor store. I thought it would go well with the beef stew 👍. The fruity and sweet flavor of the rice comes from the subtle aroma of rice, and the rich acidity passes through refreshingly without a pause. Finally, a moderate amount of bitterness and tastiness remains, giving the sake its own deep aftertaste. However, the impression is still refreshing and light. Perhaps it is the pleasant acidity left behind and the obviously delicious Yame no Mizu water that makes it so. This matches the sweet and spicy beef stew, and one can't help but drink more and more. It was worth all the sweat I put into making the beef stew 😭. It was a great treat 🙏. (Rice: Yamada-Nishiki, Yume-Ichiken)

ジャイヴNice to meet you, Summer Rain😊It was hard to believe it was September😅. I think it's hard to cook in such a situation, thank you for your hard work ✨. I've never seen it before, but I like beef stew myself, so I'm very curious about this bottle 😁.

夏雨Extreme personal preference: ⭐️⭐️⭐️✨3.5/5 Anyway, it got hot again and I'm so tired and so thirsty. I thought the typhoon cooled it down and summer was over, but it wasn't over at all, like 34°C 😂What kind of lingering heat is it ❗️ hot 🥵. I was so tired I ended up opening a bottle of Mida's hiyaoroshi 😭I was going to open hiyaoroshi when it was cooler 😝I can't help what I wanted to drink👌. The black label looks so cool 👍. When you open it, you can feel the sweetness of rice in the gentle aroma. The attack is just right fruity 🍈. The sweetness and flavor of the rice gradually fills the mouth. While spreading, the rich aroma typical of aged sake runs through, leaving a surprisingly firm lingering taste of rice cotton candy that is not overpowering. Mita's hiyaoroshi gently envelops the body in the lingering summer heat with its roundness. With hiyaoroshi, you can enjoy the lingering summer heat 😂. 夏雨Extreme personal preference ⭐️⭐️⭐️⭐️4/5 It's impatient 🥹. Sparklers at the end of summer. The gentle gas feeling soothes the lingering summer night. Soaking in hot water for the first time in a long time, too wet from the rain brought by the typhoon. The slight aroma of green apple, juicy and pleasant to the thirsty throat after the bath. The melon flavor near the skin. It has a little sweetness, but the sharp acidity makes the end of summer miserable. There is a complex bitterness in the aftertaste, perhaps due to the assemblage. At the end of the summer, sparklers add color to the night. Thank you 😂 (Rice: Domaine Sakura, Yamadanishiki "from Sakura City, Tochigi Prefecture")

夏雨My personal preference: ⭐️⭐️✨(2.5/5) I forgot to mention that I drank this Ottersai a little while ago. It is still an otter in a good way. The impression is the same as when I drank 45 a few years ago. I bought it for a summer festival, thinking that it would be easy for my wife to drink, and it did not disappoint me at all (I was tempted to drink Otters because of the festival). Well, I don't have much to say about it, but it is fruity and gorgeous. But it's clear and not too harsh. The attack is neither too strong nor too weak, just right. From the green apple aroma, the beautiful flavor of rice fills the mouth and finishes elegantly. While leaving a dry finish, the lingering taste of the rice and melon is also just the right length. Otters, always a good sake 👌 No matter when you drink it, it's always the same (and it's also cosy). This is an amazing thing ✨✨. This brewery's effort is really amazing 🙇🏻 Thanks for the treat 🙏. By the way, I also like it on the rocks. (Rice used: Yamadanishiki)

夏雨Extreme personal preference: ⭐️⭐️⭐️⭐️4/5 (when summer rocks) I'm going to say the right answer first, it absolutely rocks! Sorry, but it rocks 🪨. It's not a bad idea. I think it's the right way for this drink. I think it's made more for rock 🥹. It's not a bad idea, It has a mild aroma of rice and green apple, but everything else is strong! The acidity is so strong that it makes you flinch! The taste is strong and mellow, as expected from a wine that has been kept in an ice-temperature container! Violent rice flavor! The blue sharpness of the oni zan from the rice! Strong greenish melon type leaves 😭. Really, a sake with the feeling of "Misen" in the endorsement: ⚔️ However, it is from here! Well, at the beginning, enjoy the strength and firmness of this sake as it is, and after that, it's on the rocks 🪨. To bring out the full potential of this sake, definitely try it on the rocks! The attack is gentle and the acidity is sharp but mild. A little more melon. The umami of the rice becomes more acceptable strength and more appreciative 🥹. The mellowness fades a little, but the impression is more refreshing. And if you drink it on the rocks, the sharpness doubles. 🗡️ It has a more brilliant cutting taste, which makes it a true devil's cut. I'm here: 🙇🏻 (Raw material rice: Gohyakumangoku)

夏雨Extremely personal preference⭐️⭐️⭐️✨3.5/5 Pale amber color with lots of sugar and amino acids, probably because of the low temperature aging 😊. Fresh apple aroma with a bit of tingling on the attack, perhaps acidity. Not too much balance of sugar and acidity (Sake degree -16, acidity 3.0). ✨✨ Then the interesting rice flavor and acidity that spreads softly 🤣. White wine with sweetness of rice. The aroma is fresh and if you're not careful, the acidity will come and stay. The aftertaste is a little bitter and tangy, with a lingering umami, and a pleasant apple-flavored acidity chasing after it 🙏. It reminds me of my youthful summer love. Afterwards, the lingering bitterness and astringency bring back the sadness of a lost love. And the bubbles of alcohol disappearing. 夏雨Extremely personal taste: ⭐️⭐️⭐️3/5 Despite the white, fresh packaging, the attack is relatively strong. It has a slight tingling sensation on the tongue that is not a gas, and the acidity and rice flavor spread to the palate at once, followed by a mellow aroma and sweetness. The taste is sharp, and everything comes through sharply at the speed of a Guinness (if there was such a thing) 30-meter sprint. The aftertaste is a little bit of greenish melon-flavored cotton candy. I don't mind it. The feeling of being spread out and rushing through all at once is perfect for midsummer. Since it is freshly bottled and stored in ice temperature (6 months), the goodness of the ginjo aroma is still there. It will be interesting to see how it changes when it is refrigerated for a little while. (100% produced in Yamagata Prefecture, Japan)
